Easy Peasy Lemon Squeezy Pie image

A Weight Watcher-friendly, light, yummy summertime pie - perfect for picnics! Super quick & easy to make. It can be made ahead and frozen for up to two weeks. Time 30m

Yield 1 pie, 8-10 serving(s)

Number Of Ingredients 5

1 reduced fat graham cracker crust
11 ounces fat-free sweetened condensed milk
2 large eggs
1/2 cup fresh lemon juice
1 tablespoon lemon zest

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl, beat eggs until smooth.
  • Add milk to eggs, then the lemon juice and zest.
  • Mix until all ingredients are incorporated and mixture is smooth.
  • Pour into pie crust.
  • Bake pie for 15 minutes.
  • Cool completely.
  • Best served chilled.

Tips:

  • For the perfect lemon flavor, use freshly squeezed lemon juice. Bottled lemon juice can have a bitter taste that can overpower the other ingredients in the bars.
  • Do not overmix the batter. Overmixing can result in tough, dense bars.
  • Be sure to chill the bars for at least 30 minutes before serving. This will help them set and make them easier to cut.
  • For a fun twist, try adding a layer of raspberry or blueberry jam to the bars before baking.
  • These bars can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.

Conclusion:

These easy-peasy lemon squeezy bars are the perfect dessert for any occasion. They are simple to make, delicious, and sure to be a hit with everyone who tries them. So next time you are looking for a quick and easy dessert, give these bars a try. You won't be disappointed!
