1 large cucumber, halved and sliced

1-1/2 cups mayonnaise
1/4 cup canned chopped green chiles
2 teaspoons chili powder

2/3 cup water
1 envelope taco seasoning
2 medium ripe avocados, peeled and pitted
2 tablespoons finely chopped red onion
3 garlic cloves, minced
1 teaspoon lemon juice
4 cups shredded lettuce
1 can (2-1/4 ounces) sliced ripe olives, drained
2 medium tomatoes, chopped
1 small cucumber, peeled and chopped
5 green onions, chopped
2 cups shredded cheddar cheese
1 cup salsa
2 cups sour cream
Tortilla chips

Steps:

  • In a small skillet, cook beef over medium heat until no longer pink; drain. Stir in water and taco seasoning. Bring to a boil; cook and stir for 2 minutes. 1 large iceburg lettuce head, sliced
28 oz black beans, canned, rinced & drained
16 oz corn, canned *if frozen defrost & drain*
2 large tomatoes, chopped
1 medium red onion, chopped
8 oz sharp cheddar cheese, shredded *more if you wish*
1 large bag of tortillas, crushed
DRESSING
16 oz chipotle salsa
16 oz avocado ranch dressing
2 Tbsp cumin powder
1 tsp garlic powder
juice & zest of one lime

  • 1. Combine dressing ingredients in a mixing bowl. Add sliced lettuce to a large serving dish or pan. Layer beans, corn, onion, tomatoes and dressing on top. Chill in fridge until ready to serve.

1 Can Fire Roasted Corn, 14.75 oz, Drained
1 Package Shredded Cheddar Cheese or Mexican Blend Cheese, 8 oz
1/2 Large Red Onion, Diced
SOUR CREAM LAYER:
1 Container Sour Cream, 16 oz
Juice of One Lime
1/2 Teaspoon Salt
SALAD GARNISH
1 Pint Cherry or Grape Tomatoes, Halved
