EASY OLD TIMEY PEANUT BRITTLE

Easy Old Timey Peanut Brittle image

Mom always made this in the cast iron skillet on cold winter nights. When the weather was damp & rainy it didn't do well. As kids we would fight over who was gonna make the magic when you added the baking soda. I suggest you put everything in the skillet and don't turn it on until you have measured out the baking soda (set...

Time 50m

Number Of Ingredients 6

Dash salt
1/2 c white corn syrup
1 c sugar
2 c raw peanuts (shelled or not it's up to you)
1/4 c water
1 1/2 tsp baking soda

Steps:

  • 1. Combine all ingredients EXCEPT the baking soda in a heavy skillet & cook until the peanuts start to pop & mixture begins to brown. Stir often so all the peanuts cook evenly. On my stove it will cook about 20 minutes on 6 1/2 from the time I turn it on.
  • 2. The peanuts pop open about the time the syrup turns a carmel color. Then take off the heat & add the baking soda. Stir quickly & mix well. Pour & spread out evenly on a greased cookie sheet.
  • 3. When cool break up into pieces as desired. Eat & enjoy!!

Tips:

  • Use a heavy saucepan: This will help to distribute heat evenly and prevent the sugar from burning.
  • Use a candy thermometer: This is the best way to ensure that the sugar reaches the correct temperature.
  • Stir the sugar mixture constantly: This will help to prevent the sugar from crystallizing.
  • Do not overcook the sugar mixture: If you overcook it, the brittle will be hard and brittle.
  • Add the peanuts and butter at the right time: If you add them too early, they will burn. If you add them too late, they will not have time to caramelize.
  • Pour the brittle onto a greased baking sheet: This will help to prevent it from sticking.
  • Let the brittle cool completely before breaking it into pieces: If you break it too early, it will be too soft.

Conclusion:

Peanut brittle is a delicious and easy-to-make candy that is perfect for any occasion. With just a few simple ingredients, you can make your own peanut brittle at home. Just be sure to follow the tips above to ensure that your brittle turns out perfectly. Once you've mastered the basic recipe, you can experiment with different variations, such as adding different nuts, seeds, or spices.
