Tips:

  • To easily remove the peach skin, blanch the peaches in boiling water for 30 seconds, then transfer them to an ice bath. The skin will slip right off.
  • If you don't have a pastry blender, you can use a fork to cut the butter into the flour mixture. Just be sure to work quickly so that the butter doesn't melt.
  • Don't overmix the topping. Overmixing will make the topping tough.
  • If you don't have a cast iron skillet, you can use a regular baking dish. Just be sure to preheat the oven to 375°F.
  • Serve the peach crisp warm with a scoop of vanilla ice cream or whipped cream.

Conclusion:

This easy peach crisp for two is the perfect dessert for a summer night. It's quick and easy to make, and it's always a hit. The peaches are sweet and juicy, and the topping is crispy and flavorful.
