This delicious cobbler can be found on their dessert trays at both lunch and dinnertime. It's so easy to make you won't believe it! COOKS NOTES: If they are available by all means use fresh peaches. In a saucepan, mix two cups fresh peach slices with one cup sugar and one cup water. Bring to a boil, reduce heat, and simmer for 8 to 10 minutes, stirring occasionally. An almost equally good product is frozen peach slices. Simply follow the instructions for the fresh peach slices. NOTE: This is an adopted (late in 2006) recipe and there was already some discussion about the amount of butter necessary in reviews made previous to my inheriting this recipe: Now that I have made it myself, I can say that for me at least, 60 grams (1/4 cup) of butter was fine, (by all means use a little less if you prefer) and my dumplings didn't turn out doughy at all... what I DID mess up was using a larger can of peaches (non-metric sizes of canned fruit don't translate perfectly into metric ones), so I thought that the extra wouldn't matter much, mine was swimming rather a lot in the juice at the bottom and next time I will use all the peaches but only half or 3/4 of the juice from my metric sized can.. 1 cup sugar
3/4 cup self-rising flour
3/4 cup milk
1 (28 ounce) can peach slices in heavy syrup, undrained (or use fresh if available, see note)

  • Preheat oven to 350 degrees.
  • Place butter in oven in a 2-quart baking dish to melt.

1 c sugar
1-2 tsp cornstarch, optional to thicken
1/2-1 tsp vanilla extract
1 pkg pillisbury refrigerated roll out pie crust
1/4 c sugar and cinnamon mixed
3/4 stick butter, salted
1/8 tsp nutmeg, optional

  • 1. Butter 9x13 glass dish.
  • 2. In bowl, combine peaches, vanilla and 1 cup sugar and if desired, cornstarch. Stirring together and mixing well. Pour into baking dish.
  • 3. Roll out Pillsbury pie crust on floured surface (I use parchment.) Cut into strips with pizza cutter. Then lattice over top of peach mixture. Note: May leave crust whole if preferred.

3/4 cup all-purpose flour (gluten free version is below.)
1/2 cup sugar, (if fruit is tart increase to 3/4 cup)
1 teaspoon baking powder
pinch of nutmeg

3/4 cup buttermilk (i used ¾ cup organic milk + 1 tsp lemon juice)
2 cups only of sliced fresh peaches (or fruit of choice)
1 tablespoon of sugar for the top

  • 1. MY KITCHEN FLOUR MIX: You will use ¾ cup of this mix for this recipe. Mix well before measuring. ½ cup Brown Rice Flour ½ cup Corn Starch ½ cup Tapioca Flour ½ cup Potato Starch 1 tablespoon protein whey isolate Mix well before using. Cook's Note: No need for xanthan gum. Use the organic milk + lemon juice for the gluten free version instead of butter milk in this recipe.)
  • 2. Adjust the oven rack to upper-middle position and preheat oven to 350 degrees. Prepare your fruit and measure 2 full cups only. The batter will rise up through and around the fruit if it has room to do it. More fruit increases cooking time and it may not get done in the middle.
  • 3. Put butter in an 8-inch square pan and set in oven to melt. Don't brown it. When butter has melted, remove pan from oven. Doubling the recipe: Instead of using an oblong pan to double the recipe, I use two 8-inch pans to make sure the center is done.
  • 4. Whisk flour, 1/2 cup of sugar, baking powder and salt and nutmeg in a small bowl. Add milk, whisk to form a smooth batter. Pour batter into pan, then scatter fruit over the batter. Sprinkle the 1 tablespoon of sugar on top of the fruit.
  • 5. Bake until batter browns and fruit bubbles, 50 to 60 minutes. At my altitude, it takes about 65 minutes. Serve warm or at room temperature with whipped cream or vanilla ice cream if desired.
  • 6. HOW TO REMOVE SKINS FROM PEACHES: Wash the peaches. Put ice and water in a large bowl, set aside. Bring a large pot of water to boil. Add 5 tablespoons baking soda, a spoon at a time so it doesn't overflow, and drop the peaches in the boiling water for 30 seconds, remove them immediately (or you will cook them!) and dunk them in the ice water. When they are cool enough to handle pick up a peach and the skin will start to dissolve and melt off the peaches. You want firm, but ripe peaches for this recipe, and this technique will work perfectly.

We go camping a lot and this is one dessert that the kids (and adults) LOVE for me to make over the camp fire. This is not low fat or sugar free! It's super rich and buttery. I make this in an 8 quart cast iron dutch oven, no joke it makes a LOT. It's great with ice cream or whipped cream on top. I sort of adapted it from several cobbler recipes. Note: I've used fresh peaches too,about ten med peaches, just cook them over the stove after you peel and slice them, with the nutmeg and cinnamon 2 teaspoons of lemon juice and 1 1/2 cups sugar, until they are soft and make a syrup.

  • The cast iron will keep the cobbler warm while you eat. I reccommend that you eat warm, but cold is OK too.

2 14oz can(s) sliced peaches.
2 pkg yellow cake mix
1 stick real butter

Steps:

  • 1. you will need 14" cast iron dutch oven. pour peaches in bottom of the dutch oven. (juice and all)
  • 2. sprinkle cake mix over top of fruit. do not mix. cut pats of butter and place on top of cake mix. (evenly)
  • 3. cover and bake over medium heat,untill bubbly and top is lightly brown. approximately 35-45 min
  • 4. you can bake in the kitchen.at 350 for 40 min

2 (29 ounce) cans peaches, sliced with juice
1 1/2 cups all-purpose flour
1 1/2 cups sugar
1/2 cup butter or 1/2 cup margarine, soft

Steps:

  • Pour peaches and juice into 9x13 baking pan.
  • Mix flour, sugar and butter until crumbly, like cornmeal. Pour on top of peaches and juice.
  • Bake at 350 for approx 1 hour or until very bubbly and crust begins to turn dark brown in spots.

This is a cobbler with a quick batter baked on top. As a kid I loved this dessert, especially with ice cream.

1 c sugar
1/2 tsp cinnamon
4 c sliced fresh or frozen peaches (thawed)
1/2 c butter
2 tsp baking powder
3/4 c all purpose flour
3/4 c milk
1/2 c sugar

Steps:

  • 1. Mix 1 cup sugar, cinnamon, and peaches. Set aside. Melt butter in a 2 quart baking dish. In a medium bowl combine remaining ingredients and mix well to make a runny batter. Pour over butter in baking dish. Using a slotted spoon to drain peaches, top baking dish ingredients evenly with peaches. Bake 50-55 minutes at 350 degrees. Serve warm with ice cream or cold with whipped topping.
