SOPHIE'S SUPER EASY CHICKIE-PEA AND MATO SALAD
A refreshing, flavorful salad with just a hint of smokiness. My 3 year old and I were looking to make a quick and healthy lunch with what we had on hand. This was the tasty result. We've been experimenting with garbanzo beans (chickpeas) over the last year and she giggles whenever we eat them because her pronunciation is "chickie-peas". Since she helped create this dish and then had two helpings, I named it after her. :)

Tips:
- Use fresh, high-quality ingredients: Fresh peas, crisp celery, and sweet red onion will make all the difference in the flavor of your salad.
- Don't overcook the peas: Peas should be cooked until they are tender but still have a slight bite to them. Overcooked peas will be mushy and lose their sweetness.
- Chill the salad before serving: This will help the flavors to meld and the salad will be more refreshing.
- Add some crunch: A handful of chopped walnuts or almonds will add a nice crunch to the salad. You could also add some crispy bacon or crumbled blue cheese.
- Experiment with different dressings: The dressing in this recipe is a simple vinaigrette, but you could also try a creamy dressing or a tangy yogurt dressing.
Conclusion:
Pea salad is a refreshing and easy-to-make side dish that is perfect for potlucks, picnics, and summer gatherings. It is also a great way to use up fresh peas from your garden. With its sweet and savory flavors, pea salad is sure to be a hit with everyone at your table.
