1 lb pasta
2 (28 ounce) cans crushed tomatoes
1 (28 ounce) can diced tomatoes (or 2 smaller cans)
1 1/2 cups onions, chopped (1 large onion)
1 tablespoon jarred minced garlic
1 (8 ounce) jar capers, drained and rinsed (or small jar)
1 (15 ounce) can black olives, drained and roughly chopped
1 teaspoon crushed red pepper flakes
1 tablespoon anchovy paste (optional)
1 cup fresh parsley, chopped (stems removed)
1 tablespoon sugar
1 tablespoon olive oil
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
1 tablespoon italian seasoning (to taste)
1/2 cup parmesan cheese

Steps:

  • Cook pasta to al dente pasta according to package directions.
  • Meanwhile, sautee onion, crushed red pepper, anchony paste and garlic in a large, deep sauce pan in olive oil over medium heat until soft. Season with salt and pepper.
  • Add all other ingredients EXCEPT parsley, seasoning to taste.
  • Stir well, and let simmer 10-20 minutes on low.
  • Add parsley in last three minutes of cooking.

1 lb spaghetti
1/3 cup olive oil
4 -6 garlic cloves, minced
1 teaspoon anchovy paste
1/2 cup kalamata olive, diced
2 -3 tablespoons capers, drained
1 (28 ounce) can tomatoes, diced
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried red pepper flakes
2 tablespoons pecorino romano cheese, grated
freshly cracked black pepper

Steps:

  • Cook spaghetti to very al dente (should be slightly more undercooked than usual as it will be reheated in the sauce later). Drain, and set aside.
  • To the empty pasta pot, add the olive oil, garlic, red pepper flakes and anchovy paste. Heat on medium heat, stirring occasionally until garlic starts to sizzle and anchovy paste begins to melt into the oil. Add the olives and capers, stirring occasionally until heated through and fragrant.

4 TBSP. extra virgin olive oil
½ medium cauliflower, (about 10 oz.), cored & cut into small florets
2-3 med. cloves of garlic, minced
¼ tsp. (or just a pinch) red pepper flakes
½ tsp. sea salt
¼ tsp. dried oregano
1 cup crushed tomato sauce
½ cup warm water
¼ cup Kalamata olives, pitted & chopped
1 TBSP. small capers, rinsed well
8 oz. Gemelli pasta (or similar)
2 TBSP. fresh parsley, minced
½ cup freshly grated Parmesan cheese
--- more sea salt & freshly ground black pepper (if needed)

Steps:

  • Place a large, 12-inch nonstick skillet over medium-high heat, add the olive oil when the skillet is hot, and cook the cauliflower florets for about 6-8 minutes, tossing until it is lightly brown on all sides. Next add the garlic, the pepper flakes, the salt and the oregano. Cook for another two minutes, or, until the garlic is fragrant but not browned. Stir in the tomatoes and the warm water, the olives, and the capers. Simmer gently for about 8-10 minutes, stirring occasionally.
  • Meanwhile cook the pasta in a medium pot for about 8 minutes, or, until it is al dente (cooked through, but still firm).
  • Lift the pasta from the pot with a slotted spoon and transfer it to the skillet with the sauce. Turn the heat down and add some of the cooking water to the skillet to loosen up the sauce. Drizzle the pasta with a little olive oil. Remove the skillet from the stove top and add most of the Parmesan cheese and the parsley. Check the consistency of the sauce. If necessary, add some more of the cooking water to thin it out a bit, as needed. Check the sauce and adjust the seasoning if necessary.
  • Serve at once on warm plates with the rest of the grated Parmesan cheese.

1 shallot - minced
2 tsp tomato paste
1 tsp anchovy paste

2 TBS fresh basil - chopped
1 cup freshly grated parmesan cheese
1 lb Angel hair pasta

  • Heat olive oil in skillit over md/low heat. Add garlic and shallot. Cook 1-2 minutes. Whisk in tomato paste and anchovy paste. Combine well. Add the red pepper to your taste then the olives and capers. cook for 5 minutes over low heat. Add tomatoes. Cook another 5 minutes or until tomatoes are warm. Meanwhile boil water for pasta and add a TBS of salt to the water. Cook Pasta al dente. Add Pasta to the skillit and combine. Serve on plates - top with a TBS of parmesan cheese and a sprinkling of basil.
