EASY PASTA PUTTANESCA

Easy Pasta Puttanesca image

Pasta Puttanesca literally means "Harlot's Pasta". This zippy, mildly spicy sauce was made by the ladies of the night in Italy after a day's work. Use whatever noodle style your family enjoys, but I recommend traditional linguine or penne. This dish is extremely adaptable to your own taste. Try adding peppers or Italian sausage for a different flavor.

EASY AND DELICIOUS CAULIFLOWER PASTA ALLA PUTTANESCA

Easy and Delicious Cauliflower Pasta alla Puttanesca image

A super flavorful 20-minute pasta dish with bold, assertive Southern Italian flavors.

Provided by Marilena Leavitt

Categories     Pasta

Time 30m

Yield 2-3

Number Of Ingredients 14

4 TBSP. extra virgin olive oil
½ medium cauliflower, (about 10 oz.), cored & cut into small florets
2-3 med. cloves of garlic, minced
¼ tsp. (or just a pinch) red pepper flakes
½ tsp. sea salt
¼ tsp. dried oregano
1 cup crushed tomato sauce
½ cup warm water
¼ cup Kalamata olives, pitted & chopped
1 TBSP. small capers, rinsed well
8 oz. Gemelli pasta (or similar)
2 TBSP. fresh parsley, minced
½ cup freshly grated Parmesan cheese
--- more sea salt & freshly ground black pepper (if needed)

Steps:

  • Place a large, 12-inch nonstick skillet over medium-high heat, add the olive oil when the skillet is hot, and cook the cauliflower florets for about 6-8 minutes, tossing until it is lightly brown on all sides. Next add the garlic, the pepper flakes, the salt and the oregano. Cook for another two minutes, or, until the garlic is fragrant but not browned. Stir in the tomatoes and the warm water, the olives, and the capers. Simmer gently for about 8-10 minutes, stirring occasionally.
  • Meanwhile cook the pasta in a medium pot for about 8 minutes, or, until it is al dente (cooked through, but still firm).
  • Lift the pasta from the pot with a slotted spoon and transfer it to the skillet with the sauce. Turn the heat down and add some of the cooking water to the skillet to loosen up the sauce. Drizzle the pasta with a little olive oil. Remove the skillet from the stove top and add most of the Parmesan cheese and the parsley. Check the consistency of the sauce. If necessary, add some more of the cooking water to thin it out a bit, as needed. Check the sauce and adjust the seasoning if necessary.
  • Serve at once on warm plates with the rest of the grated Parmesan cheese.

1 shallot - minced
2 tsp tomato paste
1 tsp anchovy paste
1 pinch red pepper flakes(or more if you like it spicy) 1/4 cup chopped kalamata olives
1 TBS capers
1 cup sliced fresh grape tomatoes
2 TBS fresh basil - chopped
1 cup freshly grated parmesan cheese
1 lb Angel hair pasta
Salt for pasta water

Steps:

  • Heat olive oil in skillit over md/low heat. Add garlic and shallot. Cook 1-2 minutes. Whisk in tomato paste and anchovy paste. Combine well. Add the red pepper to your taste then the olives and capers. cook for 5 minutes over low heat. Add tomatoes. Cook another 5 minutes or until tomatoes are warm. Meanwhile boil water for pasta and add a TBS of salt to the water. Cook Pasta al dente. Add Pasta to the skillit and combine. Serve on plates - top with a TBS of parmesan cheese and a sprinkling of basil.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your pasta puttanesca. Look for ripe tomatoes, briny olives, and anchovies that are packed in oil.
  • Don't overcrowd the pan: When cooking the pasta, be sure to use a large pot so that the pasta has plenty of room to cook evenly. If you overcrowd the pan, the pasta will cook unevenly and become gummy.
  • Cook the pasta al dente: Pasta should be cooked al dente, or "to the tooth," which means that it should be slightly firm to the bite. This will help the pasta hold its shape and prevent it from becoming mushy.
  • Don't rinse the pasta: Rinsing the pasta after cooking will remove the starch that helps the sauce cling to the pasta. Instead, drain the pasta and immediately toss it with the sauce.
  • Add the sauce to the pasta, not the other way around: When combining the sauce and pasta, always add the sauce to the pasta, not the other way around. This will help the sauce coat the pasta evenly.
  • Garnish with fresh herbs: Fresh herbs, such as basil, parsley, or oregano, can add a bright, flavorful touch to pasta puttanesca. Garnish the pasta with fresh herbs just before serving.

Conclusion:

Pasta puttanesca is a delicious, versatile dish that can be made with a variety of ingredients. It is a great option for a quick and easy weeknight meal, and it is also perfect for entertaining guests. With its bold, flavorful sauce and al dente pasta, pasta puttanesca is sure to be a hit with everyone at the table.
