2 large eggs
1 1/4 cups milk
3/4 cup flour
2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Set oven to 400 degrees (bottom oven rack).
  • melt the butter in a 9-inch square baking dish in the oven.
  • In a medium bowl beat together eggs and 1/4 cup milk.
  • In another bowl sift together flour, sugar, baking powder and salt; add to the egg/milk mixture; mix until combined.
  • Slowly whisk in the remaining 1 cup milk.
  • Pour into the hot baking dish over the melted butter.
  • Bake for about 18-20 minutes.

2 tablespoons butter
1/2 cup flour
1/2 cup milk
2 eggs
1/4 teaspoon nutmeg

Steps:

  • Place butter in 10 inch hot skillet.
  • Beat 2 eggs in bowl using whisk. Add 1/2 cup flour and 1/2 cup milk and whisk till mixed. Batter will be lumpy (more lumps, the fluffier the pancake). Add nutmeg to taste.
  • Pour batter into melted butter. Bake at 425 degrees for 15-20 minutes.
