3 bone-in chicken breast halves (about 1-1/2 pounds)
1 small onion, sliced
1 bottle (12 ounces) chili sauce
1 can (8 ounces) tomato sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon dried oregano
Pepper to taste

Steps:

  • Brown chicken on all sides in a skillet coated with cooking spray. Transfer to a greased 11x7-in. baking dish; top with onion. Combine chili sauce, tomato sauce, Worcestershire sauce and oregano; pour over chicken. Sprinkle with pepper. Bake, uncovered, at 350° for 45 minutes or until meat juices run clear.

Really this is such an easy recipe I wasn't going to even bother posting it, I have been making this for years and when you can't barbecue outside this is the next best thing! --- Sweet Baby Ray's BBQ sauce works really well or use your own favorite, I most always use my recipe#232433 and prepare the sauce a day ahead --- I did not list the amounts for the seasoned salt and garlic powder as I never measure but probably use about 2 teaspoons each for all the chicken pieces, I usually use about 2 cups sauce but a little more or less is fine -- boneless, skinless chicken breasts work well also but cooking time will need to be reduced, you will *love* this!

1 (3 -3 1/2 lb) whole chickens, cut into pieces
seasoning salt
garlic powder
ground black pepper (optional)
2 cups prepared barbecue sauce

Steps:

  • Set oven to 350 degrees F (set oven rack to bottom position).
  • Grease a jelly-roll pan (it is best to cook the chicken on a rack that fits in the jelly-roll pan, if you do not have a rack then just sit the chicken in the pan).
  • Pat chicken dry using paper towels, then place skin-side down on the jelly-roll pan.
  • Season the chicken with seasoned salt, garlic powder and black pepper.
  • Turn skin-side up and season again.
  • Cover the pan with foil and bake for 45 minutes.
  • Remove from oven and carefully drain all fat from the pan.
  • Pour the barbecue sauce over the chicken turning the pieces over to coat with the sauce (place skin-side up again in pan).
  • Return to oven UNCOVERED and bake for about 30 minutes more or until if cooked through.

Is this the very best barbequed chicken you ever tasted? Nope.... but it's pretty darn good! It's also about as easy as any scratch entree recipe you'll ever make. I prepared it a few nights back when I couldn't come up with anything for supper until late in the day -- that's when I remembered the frozen chicken (cut up) in my freezer. If the chicken is still half-frozen even after some defrosting in the microwave, this recipe still works fine.

1 chicken, cut up (skin on)
12 ounces barbecue sauce (1 bottle)
1 tablespoon seasoning salt
1/2 cup butter
1/2 cup water

Steps:

  • Pre-heat your oven to 350-degrees F.
  • Dump the cut up chicken parts (you can use all of one kind, such as thighs or drumsticks if you wish -- just use about three pounds or a little more, of chicken) into a large mixing bowl. Melt the butter in the microwave and pour it all over the chicken (if the chicken is really cold the butter will re-solidify and that's okay.).
  • Sprinkle the seasoning salt all over the chicken and blend the chicken parts around until they are evenly covered with the butter and seasoned salt. I don't bother to trim the chicken -- it really makes little difference whether you do or not. You can also add a little garlic powder and/or herbs if you like those flavors -- a little rosemary would be terrific.
  • Prepare a roasting pan (or large casserole dish) by placing a rack in the bottom (or anything else, such as an ovenproof plate) which will keep the chicken off the bottom. Add the water to the bottom of the roasting pan. Lay out the chicken on the rack. Cover the roaster with a lid or aluminum foil and bake for one hour at 350-degrees F.
  • At the end of the hour, uncover the chicken and brush on the barbeque sauce until the chicken parts are well-covered. Don't worry too much about the undersides. Re-set the oven to 250-degrees F. and bake the chicken for another full hour (add another 1/2 cup of water if the roasting pan is dry -- this steams the chicken and gets it really tender.) Serve with side dishes (I like steamed asparagus and microwave-baked potatoes.).
  • I like to serve the chicken with additional barbeque sauce at the table. My three favorite commercial sauces (in order of preference) are Kroger's hickory sauce (store brand), Sweet Baby Ray's sauce, and Open Pit (regular.).
