Time 5m

Number Of Ingredients 5

1 8 oz tub of cool whip. thawed.
1 10 oz jar of maraschino cherries ( coarsely chopped)
1/4 c maraschino cherry juice
1 3 oz box of lime jello
1 shortbread pie crust

Steps:

  • 1. Pour 1/4 cup of cherry juice in to a medium bowl (this is the bowl that you will eventually mix all the ingredients in make sure it is big enough)and microwave for about 45 seconds.
  • 2. When the juice is done, pour the lime jello into the cherry juice and mix well. Its ok if it doesn't dissolve.
  • 3. Drain the rest of the cherries and coarsely chop them. I like to use my small food processor for this.
  • 4. Fold in the cool whip with the jello mixture. When that is all incorperated then mix in the chopped cherries.
  • 5. Pour the pie mixture into the shortbread crust. Cover and let it chill in the fridge for about 6 hours or over night. Enjoy

Tips:

  • Use fresh cherries for the best flavor. If using frozen cherries, thaw them completely and drain off any excess juice before using.
  • To make the cherry limeade filling, you can use either canned or bottled limeade. If using canned limeade, be sure to dilute it with water according to the package directions.
  • If you don't have a springform pan, you can use a regular 9-inch pie pan. Just be sure to trim the excess dough around the edges before baking.
  • To make sure the pie crust is golden brown, brush it with milk or an egg wash before baking.
  • Let the pie cool completely before serving. This will help the filling to set and the crust to become flaky.

Conclusion:

This cherry limeade pie is a delicious and refreshing summer dessert. It's easy to make and can be enjoyed by people of all ages. The creamy filling and flaky crust are the perfect complement to the tart cherries and tangy limeade. Whether you're serving it for a special occasion or just enjoying it as a weekend treat, this pie is sure to be a hit.
