Time 40m

Yield 4 serving(s)

Number Of Ingredients 10

4 boneless skinless chicken breast halves
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1 medium red onion, chopped
8 ounces fresh mushrooms, quartered
1 -1 1/2 cup chicken broth
2 tablespoons coarse grain mustard
1/2 cup sour cream
3 tablespoons chopped parsley
2 cups cooked egg noodles

Steps:

  • In large non-stick fry pan, melt butter over high heat.
  • Place flour in a pie pan; add chicken and turn to coat well.
  • Place chicken in fry pan and cook, turning about 5 minutes to brown well on both sides.
  • Stir in onions, mushrooms, and any unused flour.
  • Reduce heat to medium and cook, stirring, until onion is golden brown, about 5 minutes.
  • In small bowl, whisk together chicken broth and mustard.
  • Pour mixture into fry pan and stir.
  • Bring to boil, reduce heat to simmer and cook about 5 minutes.
  • Stir in sour cream and parsley and simmer for 2 additional minutes.
  • Season with salt and pepper to taste.
  • Serve over egg noddles.

Tips:

  • Use a variety of mushrooms: Different types of mushrooms will give your stroganoff a more complex flavor. Try using a combination of cremini, shiitake, and oyster mushrooms.
  • Don't overcrowd the pan: When cooking the mushrooms, make sure to give them plenty of space in the pan so that they can brown properly. If you overcrowd the pan, the mushrooms will steam instead of brown.
  • Use a good quality sour cream: The sour cream is one of the key ingredients in stroganoff, so it's important to use a good quality one. Look for a sour cream that is thick and creamy.
  • Don't overcook the beef: The beef should be cooked until it is just tender. If you overcook it, it will become tough and chewy.
  • Serve over egg noodles or mashed potatoes: Stroganoff is traditionally served over egg noodles or mashed potatoes. Both of these options are delicious and will help to soak up the creamy sauce.

Conclusion:

Mushroom stroganoff is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover beef. With a few simple ingredients, you can create a hearty and satisfying meal that the whole family will enjoy. So next time you're looking for a quick and easy dinner recipe, give mushroom stroganoff a try. You won't be disappointed!
