Scalloped potatoes, a classic comfort food dish, are traditionally made with thinly sliced potatoes, cream, and cheese, baked in the oven until golden brown and bubbly. This updated version uses the microwave to create a quick and easy scalloped potato dish that retains all the flavor and creaminess of the original. The recipe also includes variations for a cheesy bacon and ham scalloped potato dish, as well as a vegetarian version made with roasted red peppers and zucchini.

The cheesy bacon and ham scalloped potato dish adds a savory twist to the classic recipe, with crispy bacon, diced ham, and a generous helping of cheddar cheese. The vegetarian version uses roasted red peppers and zucchini for a colorful and flavorful dish that is perfect for meatless meals. Both variations are just as easy to make as the classic scalloped potatoes, and they all deliver the same creamy, cheesy goodness that makes this dish a family favorite.

We all loved my mom's super-rich scalloped potatoes. I tweaked her recipe to keep all the flavor, but cut the fat. The cheese blend is the clincher. It's all about experimenting. -Diane Bramlett, Manteca, California

EASY MICROWAVE SCALLOPED POTATOES

Easy Microwave Scalloped Potatoes image

This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

THE BEST SCALLOPED POTATOES

The Best Scalloped Potatoes image

Creamy, cheesy and perfectly indulgent, scalloped potatoes are a classic for good reason. While cooking, the starch from the potatoes thickens the cream into a luscious sauce while the cheesy topping becomes golden and nutty in the oven. Allowing the casserole to rest for 10 minutes before serving makes it easier to slice.
