1-1/2 pounds ground beef
1 envelope taco seasoning
3/4 cup water
1 can (16 ounces) refried beans
1/2 cup salsa
6 flour tortillas (6 inches)
2 cups frozen corn, thawed
2 cups shredded cheddar cheese
Optional: Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. , Meanwhile, in a microwave-safe bowl, combine beans and salsa. Cover and microwave 1-2 minutes or until spreadable., Place three tortillas in a greased round 2-1/2-qt. baking dish. Layer with half the beef, bean mixture, corn and cheese; repeat layers. , Bake, uncovered, until cheese is melted, 40-45 minutes. Let stand 5 minutes. 2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
½ cup chopped green onion
½ cup chopped fresh tomato
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.

1 lbs ground beef
10 oz RoTel diced tomatoes with green chilies ((1 10 oz can, drained))
4 oz diced green chiles ((1 4 oz can, drained))
2 Tbsp taco seasoning mix ((store bought or use my recipe))
15 oz creamed corn (1 14 oz or 15 oz can))
15 oz black beans ((1 15 oz can, drained))
1 cup cheddar cheese ((grated))
1 cup Monterey Jack cheese ((grated))

Steps:

  • Preheat oven to 350°F (175°C) and grease a 9x13 or 2-quart casserole dish.
  • Crush the tortilla chips and layer the bottom of the casserole dish. Set aside.
  • In a large skillet, brown the ground beef over medium high heat.
  • When the beef is browned add the RoTel tomatoes, green chiles, and taco seasoning. Mix well. Reduce heat and simmer for another 3 to 5 minutes.
