Time 30m

Number Of Ingredients 6

24 cooked meatballs, thawed if frozen
1 green or yellow pepper or both or squash, cut into chunks
1 red pepper, cut into chunks
1 medium onion, cut into chunks
1 c barbecue sauce, your favorite kind and as much as you like
skewers

Steps:

  • 1. *Note: If using Bamboo skewers soak for 45 minutes in water to prevent scorching. With skewer, Peirce a piece of onion then a meatball, then a piece of green papper, then another meatball, add a red pepper and alternate using different veggies and continue until you have 4-6 meatballs on the skewer ending with a piece of onion. How many you get on depends on the size of your meatballs.
  • 2. Repeat for your all the skewers you are using. Again depending on how big your meatballs are. Line a cookie sheet pan with foil if baking them and place them on the foil.
  • 3. Brush both sides of the skewered balls and veggies with BBQ sauce. Use as much as you like. I don't like a whole lot.
  • 4. Grill them over medium heat, or Broil 6" from broiler, or bake 375 degrees until the balls are golden and heated through about 15-20 minutes. I baked them. The meatballs are already cooked so you just want the veggies crisp tender and meatballs hot.

Tips:

  • Select the proper type of meat: For tender meatballs with a juicy interior, choose ground chuck or sirloin.
  • Use fresh herbs and spices: Dried herbs and spices lack flavor compared to fresh ones. Fresh herbs like parsley, cilantro, or basil add a vibrant flavor.
  • Don't overmix the meatball mixture: Overmixing can result in tough meatballs. Mix just until the ingredients are combined.
  • Chill the meatball mixture before cooking: Chilling helps the meatballs hold their shape and prevents them from falling apart during cooking.
  • Cook the meatballs thoroughly: Meatballs should reach an internal temperature of 165°F (74°C) to ensure they are safe to consume.
  • Use a variety of vegetables: Colorful vegetables like bell peppers, onions, and mushrooms add flavor, texture, and visual appeal to the kebobs.
  • Marinate the vegetables: Marinating the vegetables in olive oil, herbs, and spices enhances their flavor.
  • Preheat the grill or oven before cooking: A preheated grill or oven ensures the meatballs and vegetables cook evenly.
  • Baste the meatballs and vegetables while cooking: Basting helps keep the meatballs moist and the vegetables tender.
  • Serve the kebobs with your favorite dipping sauce: Dipping sauces such as tzatziki, marinara, or barbecue sauce add an extra layer of flavor to the kebobs.

Conclusion:

Easy Meatball Kebobs are a delightful and versatile dish perfect for any occasion. By following these tips and using fresh, high-quality ingredients, you can create tender, flavorful meatballs and colorful, delicious vegetables that will impress your family and friends. Whether you choose to grill or bake them, these kebobs are a healthy and satisfying meal that combines the goodness of meat and vegetables in a fun and visually appealing way.
