Time 55m

Yield 8 to 10 servings

Number Of Ingredients 13

Kosher salt
1 pound elbow macaroni
2 1/2 cups milk
1 teaspoon dried Italian seasoning
Pinch crushed red pepper flakes
Two 8-ounce packages cream cheese, at room temperature
8-ounces sharp Cheddar, grated
1 cup shredded Italian blend cheese
1/2 cup prepared marinara sauce
1/2 cup jarred sun-dried tomatoes in oil, roughly chopped, plus 1/4 cup of the oil
3 ounces sliced pepperoni, halved
1 cup dry Italian bread crumbs
1/4 cup grated Parmesan

Steps:

  • For the mac and cheese: Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions for al dente; drain, reserving 1 3/4 cups of the pasta water.
  • Bring the milk, Italian seasoning and crushed red pepper flakes to a simmer in a large saucepan over medium heat. Continue cooking until the milk reduces to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in both the Cheddar and Italian blend cheeses, a handful at a time, until all the cheese is melted and the sauce is smooth.

Pour into a 9-by-13-inch baking dish. Macaroni and Cheese Pizza image

Provided by Aaron McCargo Jr.

Time 1h15m

Yield 1 pizza

Number Of Ingredients 17

1/2 pound dried rotini pasta
Olive oil cooking spray
6 slices thick-cut good quality bacon
2 tablespoons unsalted butter
1 white onion, finely chopped
1 clove garlic, finely chopped
Pinch ground nutmeg
Salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 cups whole milk
2 cups grated sharp Cheddar
1 cup grated mozzarella
1 cup panko breadcrumbs
1/2 cup Parmesan
3 tablespoons chopped fresh chives
1 tablespoon olive oil
1 store-bought pizza dough, rolled out and spread on a well-oiled baking sheet

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of water to a boil and cook the rotini al dente. Drain and spray with olive oil cooking spray, making sure the noodles are coated well. Set aside.
  • In a large saute pan over medium-high heat, cook the bacon until crispy. Remove to a paper towel-lined plate. Remove all but 1 tablespoon of the bacon drippings and add the butter. Add the onions, garlic and nutmeg. Season the vegetables with salt and pepper and saute until the onions wilt and become translucent, about 4 minutes. Reduce the heat to medium-low and sprinkle in the flour, stirring to coat the onions and garlic. Continue to cook until you have a blond roux, about 5 minutes. Whisk in the milk until you have a thick enough sauce that it coats the back of a spoon. Crumble the bacon and add half to the sauce. Mix in the Cheddar and mozzarella. Turn the heat to low. Add the pasta to the cheese sauce and stir to coat. Cover and keep warm.
  • In a small bowl, add the breadcrumbs, Parmesan, chives and olive oil. Add the rest of the crumbled bacon and add it to the bowl, stirring well to combine.
  • Spray the pizza dough with the olive oil spray and place into the oven for 7 minutes. Remove from the oven and set down. Spread the macaroni and cheese on the pizza, being careful to leave a 1-inch border. Sprinkle with the breadcrumb mixture on the macaroni and cheese and bake in the oven for 10 minutes. Remove from the oven and let stand for 10 minutes to set the macaroni and cheese.

Tips:

  • Choose the right pasta. Macaroni is the classic choice for mac and cheese pizza, but you can use any short pasta shape that you like, such as penne, shells, or rotini.
  • Cook the pasta al dente. This means cooking it until it is just tender, but still has a slight bite to it. Overcooked pasta will be mushy and not hold its shape well on the pizza.
  • Use a creamy cheese sauce. A béchamel sauce is the traditional choice for mac and cheese pizza, but you can also use a cheese sauce made with cheddar, mozzarella, or any other type of cheese that you like.
  • Add your favorite toppings. In addition to macaroni and cheese, you can add any other toppings that you like to your pizza, such as bacon, ham, chicken, vegetables, or herbs.
  • Bake the pizza until the cheese is melted and bubbly. This will take about 10-15 minutes in a preheated oven.

Conclusion:

Mac and cheese pizza is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover macaroni and cheese, and it is also a fun and creative way to serve pizza. With so many different variations to choose from, there is sure to be a mac and cheese pizza recipe that everyone will enjoy.
