1 (10 1/2 ounce) can low-fat condensed cream of chicken soup
1 cup low-fat sour cream
1/2 cup diced onion
1 tablespoon poultry seasoning
4 ounces low-fat Ritz crackers (about 20)
2 tablespoons poppy seeds

4 skinless, boneless chicken breast halves
½ cup butter, melted
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese

Steps:

  • Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.

8 oz ritz reduced fat crackers
1/2 c light butter
1 Tbsp poppy seeds
10 1/2 oz low fat cream of chicken soup
12 1/2 oz premium white chicken, (i use the coctoc kirkland brand)
1/2 c sour cream
1 6 x 8 baking dish

Steps:

  • 1. Preheat oven to bake 375 degrees F. Tip: Place cookie sheet in oven when you preheat. The casserole will cook faster.
  • 2. Mix together the cracker crumbs, melted butter and poppy seed in a bowl. Layer a 6 x 8 baking dish with 2/3 of the cracker mix. Thoroughly combine the soup, sour cream and chunky chicken together and spoon the mixture over the crumb crust. Sprinkle the remaining 1/3 of the cracker mix over the top of the chicken mixture.
  • 3. Bake in the preheated oven until the casserole is hot and bubbling and the topping is crispy brown, about 1 hour.
