EASY LOW CARB SLOPPY JOES

Easy Low Carb Sloppy Joes image

This is a low carb sloppy joe recipe based on one kindly made for me in San Diego. It's loosely modified from the very popular 2003 recipe by Hey Jude. It's also well suited for the crockpot.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 13

1 -1 1/2 lb ground beef
2 -3 stalks celery, chopped
1 small onion, chopped
1 (8 ounce) can tomato sauce
1/4 cup low-carb ketchup, preferably with splenda
1/4 cup low-carb barbecue sauce (your favorite, or use more low carb ketchup)
1 tablespoon brown sugar substitute, we like ideal brown
1 teaspoon dry mustard
salt and pepper
1 tablespoon Worcestershire sauce
1 tablespoon vinegar
cheese, like Velveeta cheese, to taste
1 large lettuce leaf

Steps:

  • In a skillet, brown the ground beef, onion and celery.
  • Drain off the fat, so the sauce sticks to the meat.
  • Add the rest of the ingredients and let simmer on low on the stove for 20-40 minutes, or longer.
  • Wrap meat and cheese in lettuce and enjoy!
  • Special slow cooker instructions:.
  • Brown the ground beef and add onion. Put into the slow cooker and add all other ingredients. Cook 4-5 hours on low.

Tips:

  • Use a variety of vegetables. This will add flavor, texture, and nutrients to your sloppy joes. Some good options include onions, bell peppers, celery, mushrooms, and zucchini.
  • Cook the vegetables until they are soft. This will help them to release their flavors and blend well with the other ingredients.
  • Use a low-carb sweetener. This will help to keep the sloppy joes low in carbohydrates. Some good options include stevia, erythritol, and monk fruit.
  • Use a thickener, such as xanthan gum or glucomannan powder. This will help to thicken the sloppy joe sauce and give it a more traditional texture.
  • Serve the sloppy joes on low-carb buns or lettuce wraps. This will help to keep the overall carbohydrate content of the meal low.

Conclusion:

Low-carb sloppy joes are a delicious and easy meal that can be enjoyed by the whole family. They are a great way to use up leftover vegetables and they can be made ahead of time and frozen for later. With a few simple tips, you can make low-carb sloppy joes that are just as flavorful and satisfying as the traditional version.
