Number Of Ingredients 13

2 cups water
1 teaspoon salt
1 cup lentils
nonstick cooking spray
1 cup quick-cooking oats
¾ cup shredded sharp Cheddar cheese
1 small white onion, diced
½ cup tomato sauce
1 large egg, lightly beaten
1 clove garlic, minced
1 tablespoon dried parsley
1 teaspoon dried basil
¼ teaspoon ground black pepper

  • Combine water and salt in a saucepan; bring to a boil. Cover, reduce heat to low, and simmer until lentils are soft and most of the water is evaporated, about 30 minutes. Remove from heat.

  • Drain and partially mash lentils, then scrape into a mixing bowl. Stir in oats, Cheddar cheese, and onion. Add tomato sauce, egg, garlic, parsley, basil, and pepper; mix until well combined. Spoon into the prepared loaf pan and smooth the top with the back of the spoon.

Tips:

  • Use a variety of lentils. This will give your loaf a more complex flavor and texture.
  • Don't overcook the lentils. They should be cooked until they are tender but still hold their shape.
  • Use a food processor to chop the vegetables and lentils. This will make the loaf easier to mix and will help it hold together better.
  • Add plenty of seasonings. Lentils can be a bit bland on their own, so don't be afraid to add herbs, spices, and other flavorings.
  • Be patient. It takes a little time to make lentil loaf, but it's worth it! The loaf is best if it's allowed to cool completely before slicing and serving.

Conclusion:

Lentil loaf is a delicious and nutritious vegetarian dish that can be enjoyed by people of all ages. It's a great way to use up leftover lentils, and it's also a good source of protein, fiber, and iron. Serve lentil loaf with your favorite sides, such as roasted vegetables, mashed potatoes, or a simple salad.
