4 large eggs, beaten
2 cups sugar
1/2 cup butter, cubed

Nutrition Facts :

Tips:

  • To achieve the perfect lemon curd texture, whisk constantly over medium heat until the mixture has thickened and coats the back of a spoon. Avoid boiling, as this can cause the curd to curdle.
  • For a smooth lemon curd, strain the mixture through a fine-mesh sieve before using. This will remove any lumps or zest particles.
  • To prevent the lemon curd from becoming grainy, make sure to use fresh lemon juice and zest. Avoid using bottled or concentrated lemon juice, as these can contain additives that can affect the texture of the curd.
  • If you don't have a double boiler, you can create one by placing a heatproof bowl over a saucepan filled with simmering water. Make sure the bottom of the bowl doesn't touch the water, as this can cause the curd to overheat and curdle.
  • To make the lemon curd bars ahead of time, bake them according to the recipe and let them cool completely. Then, wrap them tightly in plastic wrap and store them in the refrigerator for up to 3 days. When ready to serve, let them come to room temperature for about 30 minutes before serving.
