Tips:

  • Select ripe, firm zucchini: Choose zucchini that are deep green in color and have smooth, unblemished skin. Avoid zucchini that are yellow or have soft spots.
  • Slice zucchini evenly: This will help them cook evenly. If you are using a mandoline, be sure to use the guard to protect your fingers.
  • Don't overcrowd the pan: When cooking the zucchini, be sure to give them enough space so that they can brown properly. If you overcrowd the pan, the zucchini will steam instead of brown.
  • Use a good quality olive oil: Extra virgin olive oil is the best choice for this recipe. It will add a delicious flavor to the zucchini.
  • Season the zucchini well: Salt and pepper are essential, but you can also add other herbs and spices to taste. Some good options include garlic powder, onion powder, Italian seasoning, or red pepper flakes.
  • Serve the zucchini immediately: Zucchini is best served hot and fresh. You can garnish it with fresh herbs, such as basil or parsley.

Conclusion:

This easy Italian tomato zucchini recipe is a delicious and healthy side dish that can be enjoyed by people of all ages. It is a great way to use up fresh zucchini from your garden or local farmers market. The zucchini is cooked until tender and slightly browned, and the tomatoes add a sweet and tangy flavor. This dish is perfect for a summer cookout or a weeknight meal.
