Shepherd's pie is a classic Irish dish that is hearty, delicious, and perfect for a cold winter day. It consists of a layer of minced lamb or beef, topped with a layer of mashed potatoes. The shepherd's pie is then baked in the oven until the potatoes are golden brown and the filling is bubbling.
This article provides three different recipes for shepherd's pie: a classic recipe, a vegetarian recipe, and a cottage pie recipe. The classic recipe uses minced lamb, while the vegetarian recipe uses lentils and vegetables. The cottage pie recipe uses minced beef. All three recipes are easy to follow and can be made with ingredients that are readily available.
The classic shepherd's pie recipe starts with browning the minced lamb in a pan. Once the lamb is browned, it is simmered in a gravy made with onions, carrots, celery, and herbs. The mashed potatoes are then prepared and spread over the lamb mixture. The shepherd's pie is then baked in the oven until the potatoes are golden brown and the filling is bubbling.
The vegetarian shepherd's pie recipe follows a similar process, but instead of using minced lamb, it uses lentils and vegetables. The lentils and vegetables are simmered in a gravy made with onions, carrots, celery, and herbs. The mashed potatoes are then prepared and spread over the lentil and vegetable mixture. The shepherd's pie is then baked in the oven until the potatoes are golden brown and the filling is bubbling.
The cottage pie recipe is very similar to the classic shepherd's pie recipe, but it uses minced beef instead of minced lamb. The minced beef is browned in a pan and then simmered in a gravy made with onions, carrots, celery, and herbs. The mashed potatoes are then prepared and spread over the beef mixture. The cottage pie is then baked in the oven until the potatoes are golden brown and the filling is bubbling.

Steps:
- potatoes: boil the potatoes in a large pot of salted water until fork tender. Sometimes I'll throw in a couple cloves of garlic in with the potatoes too. Drain, mash and mix in the remaining mashed potatoes ingredients and season with salt and pepper to taste.
- cook the meat and veggies: heat the olive oil in a large oven-safe pot over medium-high heat. Add the ground lamb and crumble the meat using a wooden spoon. Cook for 4-5 minutes or until the meat browns, drain any excess grease leaving just 1 tablespoon. Add the mirepoix and season the veggies with a small pinch of salt and allow the veggies to cook down until translucent, about 7-9 minutes. Add the garlic and let cook another 30 seconds or until fragrant.
- beef gravy: Position a rack in the center of the oven and preheat the oven to 425ºF. Sprinkle the ground meat mixture with the cinnamon, nutmeg, and cornstarch, stir to combine and let cook for 15 seconds before adding the Worcestershire sauce, tomato paste, herbs, bay leaf, and beef stock. Allow the gravy to come to a simmer before reducing the heat to low and letting it simmer for 15 minutes. Remove the herbs, stir in the peas, taste and adjust with salt and pepper as desired.
- bake and serve: Drop large dollops of the prepared mashed potatoes on top of the beef gravy then smooth out gently. Bake for 15 minutes then, finish it under the broiler if you want it to be golden brown on top. Let cool for several minutes before serving.
TRADITIONAL IRISH SHEPHERD'S PIE
Posting this per a request. I've said it once and I'll say it again there is nothing Irish about Corned Beef and Cabbage, but Shepherd's Pie has always been and still is a staple of traditional Irish cooking. This is a really easy, but tasty recipe that the whole family will enjoy. It's nutritionally sound with all the major food groups represented. The British use lamb in their Shepherd's Pie, but we've always used beef. Do whatever you prefer or even try turkey if you're watching fat content. This sauce is lovely and rich and should go well with any meat. You can use fresh or leftover mashed potato. I usually use 3 tbsp of ketchup instead of the 2tbsp of tomato paste as I like the hint of sweetness, but traditionally the paste would be more sound! You can also make individual pies which are always a hit with the kids. This freezes beautifully too, so make two and save one! Just let it defrost and glaze with the egg and pop into the oven as directed. Enjoy! :)

Steps:
- Pre-heat oven to 200C/400°F.
- Saute carrots in the olive oil until starting to get tender.
- Add in the onions and saute for a minute or two then add the meat.
- Season with black pepper and thyme.
- Cook until browned then drain fat.
- Add the butter and peas.
- Sprinkle with flour and stir through.

- Let this reduce slightly then add the chicken stock. Allow to reduce down until you have a thick meaty gravy. Season to your taste.
- Remove from heat. Grease an oven proof dish** (9x13 works for me, as does an oval baker) with butter and add the sauce.
- Spoon or pipe the mashed potatoes over top. Brush with egg and sprinkle with Parmesan cheese if using.
- Bake for about 20 minutes or until the potato is nice and browned on top.
- Serve as is or with some crusty bread to mop up that yummy sauce!

A SCOTSMAN'S SHEPHERD PIE
Yes, shepherd's pie is predominantly thought of as Irish or British. But since I'm Scottish, I thought I'd give it a unique twist to suit my ancestral tastes. The use of lamb, the smoky, heather taste of Guinness® Draught (Irish, I admit), and the topping of sharp Cheddar and smoked paprika give this version its unique, smoky-sweet flavor.

Steps:
- Stir potatoes, sour cream, cream cheese, 1 tablespoon butter, egg yolk, 1/2 teaspoon salt, and 1/2 teaspoon black pepper together in a bowl until smooth.
- Heat olive oil in a cast iron skillet or nonstick pan over medium-high heat. Add ground lamb, reduce heat to medium, and cook, stirring frequently, until browned and crumbly, 4 to 5 minutes. Pour off excess grease and season lamb with salt and black pepper to taste.
- Stir tomatoes with juice, onion, and carrot into ground lamb; simmer until vegetables are tender, 5 to 10 minutes. Add peas, reduce heat to low, and cook, stirring frequently, until peas are warmed, 2 to 3 minutes.
- Heat beer in a saucepan over medium heat; add beef bouillon. Cook and stir beer mixture until bouillon is dissolved, about 5 minutes.
- Heat remaining 1 tablespoon butter in a separate pan over medium-low heat until sizzling. Whisk flour into butter until thick and paste-like, about 1 minute. Stir beer mixture and Worcestershire sauce into flour mixture until gravy is smooth and thickened, 2 to 3 minutes. Stir gravy into lamb mixture and simmer until mixture is thickened, at least 5 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Grease a 9x12-inch baking dish.
- Pour lamb mixture into the prepared baking dish. Carefully spoon mashed potatoes over lamb mixture, covering like a crust. Sprinkle Cheddar cheese, parsley, and paprika over mashed potatoes.
- Broil in the preheated oven until crust is browned and cheese is melted, 4 to 5 minutes. Cool for about 5 minutes before serving.

EASY IRISH SHEPHERD'S PIE
Steps:
- Brown beef or lamb and drain fat. Set aside. Sauté onion, and garlic in oil until onions are translucent. Add meat, seasonings, and gravy. Stir and simmer for 20 minutes. (The mixture should be thick enough that the mashed potatoes don't sink into it.) Set aside to cool. Boil the potatoes until soft (about 20 minutes) and drain. Replace in cooking pot and add butter; when melted, add milk a bit at a time and mash to make a fairly soft consistency. Place meat mixture in a greased baking dish and top with a layer of potatoes. Fluff the surface up into uneven peaks using a fork. Sprinkle with cheese. Bake at 350 F for 30 to 45 minutes or until top is crusty and slightly browned. Garnish with chives.
Tips:
- For a richer flavor, use a combination of ground beef and lamb in your Shepherd's Pie.
- Don't be afraid to experiment with different vegetables in your Shepherd's Pie. Some good options include carrots, parsnips, and peas.
- Be sure to season your Shepherd's Pie well with salt and pepper. You can also add other herbs and spices to taste, such as thyme, rosemary, or garlic powder.
- If you don't have any leftover mashed potatoes, you can make some fresh mashed potatoes using Yukon Gold or Russet potatoes.
- To make your Shepherd's Pie ahead of time, simply assemble the dish and then cover it and refrigerate for up to 24 hours. When you're ready to serve, bake the Shepherd's Pie according to the recipe instructions.
Conclusion:
Shepherd's Pie is a classic comfort food dish that is perfect for a cold winter night. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a hearty and delicious meal, give Shepherd's Pie a try!
