SUNNY'S EASY HOLIDAY SPIRAL HAM

Categories     main-dish

Time 3h

Yield 8 to 10 servings

Number Of Ingredients 8

1/2 cup dark brown sugar
1/4 cup honey
Zest and juice of 1 orange
2 teaspoons pumpkin pie spice
6 to 8 scrapes of fresh nutmeg, using a rasp
One 6- to 7-pound bone-in half spiral ham
10 to 12 sprigs fresh thyme
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oven to 325 degrees F.
  • In a bowl, mix together the brown sugar, honey, orange zest, 1/4 cup orange juice, pumpkin pie spice, and nutmeg. Season with salt.
  • Roll out enough aluminum foil to surround the ham and place the ham in the center of the foil. Peel back the layers of the ham and place a sprig of thyme between every other layer of the spirals. Pour half of the glaze over the ham allowing it to sink into the slices. Tightly wrap the ham in the foil and place on a rack in a roasting pan. Fill the pan with an inch of water and roast in the oven until the internal temperature reaches 140 degrees F, about 20 minutes per pound.
  • Pour the remaining half of the glaze in a small saucepot on medium heat and bring to a simmer. Whisk until small bubbles appear all over, then turn off the heat. The glaze will thicken as it rests.
  • Raise the oven temperature to 400 degrees F.
  • Remove the ham from the oven. Using caution and tongs to help, peel back the aluminum foil from the top, leaving the aluminum foil on the sides and underneath the ham to catch the glaze and juices. Slather the remaining glaze all over the top of the ham and place back in the oven uncovered for 15 more minutes. Remove and let rest before slicing.

Tips:

  • Choose the right ham: Select a ham that is fully cooked and spiral-cut. This will make it easier to inject the marinade and ensure even cooking.
  • Make a flavorful marinade: Use a combination of sweet, savory, and tangy ingredients to create a marinade that will infuse the ham with flavor. Common ingredients include brown sugar, honey, pineapple juice, mustard, and cloves.
  • Inject the marinade evenly: Use a meat injector to distribute the marinade throughout the ham. This will help to ensure that the ham is evenly flavored and moist.
  • Cover and refrigerate the ham: After injecting the marinade, cover the ham and refrigerate it for at least 12 hours, or up to 24 hours. This will allow the marinade to penetrate the ham and develop its flavor.
  • Preheat the oven and prepare the pan: Preheat the oven to the temperature specified in the recipe. Place the ham in a roasting pan and add a little water or broth to the bottom of the pan. This will help to keep the ham moist during cooking.
  • Bake the ham: Bake the ham according to the recipe instructions, basting it with the pan juices every 30 minutes or so. This will help to keep the ham moist and prevent it from drying out.
  • Let the ham rest before serving: Once the ham is cooked, remove it from the oven and let it rest for 15-20 minutes before serving. This will allow the juices to redistribute throughout the ham, resulting in a more tender and flavorful dish.

Conclusion:

Injected ham is an easy and delicious way to add a special touch to your holiday meal. With a flavorful marinade and a few simple steps, you can create a ham that is sure to impress your family and friends. So next time you're looking for a simple and delicious holiday dish, give injected ham a try.
