1/2 cup finely chopped onion
1/2 cup tomato juice
1 1/2 cups chicken broth
3 tablespoons all-purpose flour
1/2 cup finely chopped celery
1 teaspoon curry powder
1/2 teaspoon Worcestershire sauce
2 cups hot cooked rice
2 tablespoons butter or 2 tablespoons margarine
1 1/2 cups chopped cooked chicken (8 ounces)

Steps:

  • In a medium saucepan cook the onion and celery in hot butter or margarine until tender. Stir in the flour and curry powder.
  • Add the chicken broth and Worcestershire sauce. Cook and stir until thickened and bubbly.
  • Stir in the tomato juice and cooked chicken; heat through.
  • If desired, season to taste with salt and pepper. Serve over hot rice.

6-8 chicken pieces (big)
4 Tbsp oil / butter
1 tsp turmeric powder
salt to taste
2 green chilli
1/2 c water, boiling
FOR THE MASALA (PASTE)
1 onion, medium size
1 1/2 Tbsp garlic paste
1 tsp ginger paste
1 tsp red chilli powder
1 tomato
1 tsp cardamon, ground
1/2 tsp cinnamon, ground
1 tsp poppy seeds
1 Tbsp cilantro, fresh

Steps:

  • 1. Ground everything for MASALA to a smooth paste.
  • 2. Marinate Chicken in that masala for 10 minutes.
  • 3. Heat oil / Butter and add arinated chicken with the paste. Add salt, turmeric powder and cook till oil separates which is important indication that the masala is being cooked properly.
  • 4. Add green chilli [optional] and 1/2 cup of water and cook till it boils. Serve with white rice or bread.

Tips:

  • To save time, use pre-cut chicken or chicken that has been cooked and shredded ahead of time.
  • If you don't have garam masala, you can make your own by combining 1 teaspoon each of ground cumin, coriander, cardamom, and black pepper.
  • If you like your curry spicy, add an extra 1/2 teaspoon of chili powder or cayenne pepper.
