1/2 cup butter, softened
1 1/2 cups sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3 ripe bananas, mashed (about 1 1/3 cups)

Steps:

  • Preheat oven to 325ºF. Grease and flour a 9- x 5-inch loaf pan. Beat butter and sugar at medium speed with an electric mixer until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition. Combine flour, soda, and salt; add to batter, and mix just to combine. Add bananas, mixing well.
  • Spoon batter into prepared pan. Bake at 325ºF for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean and sides pull away from pan, shielding with aluminum foil during last 15 minutes to prevent excessive browning, if necessary. Cool in pan on a wire rack 10 minutes. Remove from pan, and cool 30 minutes on wire rack before slicing. Serve with butter.

8 Tablespoons Unsalted Butter ((softened))
2 Eggs ((large))
3 Bananas ((ripe & large sized))
2 Cups Flour ((all purpose flour))
1 Cup White Granulated Sugar
1 Teaspoon Vanilla Extract
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder ((aluminum free))
1/2 Teaspoon Salt

Steps:

  • Preheat oven to 325 degrees F.
  • Mash bananas with a fork.
  • Soften butter in a microwave.
  • Stir eggs, bananas and butter together.
  • Mix in remaining ingredients. Stir until the batter is fully mixed.
  • Optional - If you want to enhance this easy "basic" banana bread, you can stir in 1 cup of your family's favorite dessert ingredient (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.
  • Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  • Bake in the oven for 65-70 minutes or until golden brown.
  • Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
