This is an easy recipe that I like to make when I'm in a hurry.

Provided by Jeanne Benavidez

Categories     Potatoes

Time 20m

Number Of Ingredients 6

3 medium potatoes, washed and cut into 1 inch cubes
1 pkg dry onion soup mix
1 tsp lawry's california blend garlic salt
1 Tbsp dried parsley
1 tsp ground black pepper
1/2 c canola oil

Steps:

  • 1. Put everything except the potatoes into a gallon-size sealable plastic bag. Seal and mash the mixture until well blended.
  • 2. Add the potatoes and seal the bag again. Turn the bag over repeatedly to cover the potatoes with the herb mixture.
  • 3. In a shallow microwaveable dish, lay the plastic bag with the potatoes.
  • 4. Spread the potatoes to make a even layer and unzip the bag about half way so that the steam can escape. Don't let the herb and oil mixture spill out of the bag.
  • 5. Place in the microwave and cook on high for 8 minutes.
  • 6. Stir and check to see if the potatoes are tender. If not, continue to cook for 1 minute intervals until desired tenderness.
  • 7. Great served with butter, sour cream and/or cheese.

Tips:

  • Choose the right potatoes: Yukon Gold or red potatoes are ideal for this recipe, as they hold their shape well and have a creamy texture.
  • Cut the potatoes evenly: This will help them cook evenly.
  • Use fresh herbs: Fresh herbs add a lot of flavor to this dish. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount.
  • Don't overcrowd the pan: Make sure the potatoes are in a single layer in the pan so that they can cook evenly.
  • Roast the potatoes until they are tender and golden brown: This will take about 20-25 minutes.
  • Serve the potatoes immediately: They are best when served hot and crispy.

Conclusion:

These Easy Herbed Potatoes are a delicious and versatile side dish that can be served with a variety of meals. They are easy to make and can be tailored to your own taste preferences. Whether you like them crispy or soft, garlicky or rosemary-infused, these potatoes are sure to be a hit.
