Yield 8-10 serving(s)

Number Of Ingredients 10

1 cup thinly sliced carrot
2 cups basmati rice (or other fine quality rice)
1/2 teaspoon dill weed
2 tablespoons chopped fresh parsley
1 cup chopped onion
3 cups water
2 teaspoons salt
1 dash black pepper
non-stick olive oil flavored cooking spray (or 1 tsp. olive oil, spread in pan with paper towel)
1 tablespoon fat-free margarine (or vegan margarine) (optional)

Steps:

  • Spray large saucepan with cooking spray.
  • Add onion and carrots and saute over medium heat, adding a few drops of water if necessary to prevent sticking, stirring frequently, until onion is translucent and carrot is fairly tender.
  • Add water rice, salt, dill weed, and pepper; bring to a boil.
  • Cover; simmer 20-25 minutes or until rice is tender.
  • Stir in parsley and fat-free margarine.
  • Serve.

Tips:

  • Use high-quality rice for the best flavor and texture. Basmati or jasmine rice are good choices.
  • Rinse the rice thoroughly before cooking to remove any starch and prevent it from becoming sticky.
  • Toast the rice in a little oil before adding the liquid. This will help to give it a nutty flavor and prevent it from clumping together.
  • Use a flavorful broth or stock instead of water for cooking the rice. This will add more depth of flavor to the dish.
  • Add fresh or dried herbs to the rice while it is cooking for a more aromatic dish. Good choices include parsley, cilantro, basil, thyme, and rosemary.
  • Fluff the rice with a fork before serving to separate the grains and make it light and fluffy.

Conclusion:

Herb rice is a versatile and delicious side dish that can be served with a variety of main courses. It is also a good way to use up leftover rice. With a few simple ingredients and a little bit of time, you can make a flavorful and aromatic herb rice that will impress your family and friends.
