This easy and colorful Hawaiian chicken salad with grilled pineapple and vegetables is the perfect lean dish for lunch or dinner.

Categories     Dinner     lunch     Main Course

Number Of Ingredients 13

1/2 tsp diced chili
1 tsp cilantro
1 tbsp olive oil
1/2 lime ((juice only))
1/4 tsp white wine vinegar
1 chicken breast fillet
1 tsp Cajun seasoning ((or any other seasoning))
1/2 avocado
2 radishes
1/2 red bell pepper
5 cherry tomatoes
100 g fresh pineapple ((peeled and sliced))
handful cilantro ((green coriander))

Steps:

  • First, prepare the chicken breast fillets by seasoning them. I like to add salt, pepper, paprika and garlic powder to them, but you can definitely just use whatever seasoning you like.
  • Preheat your oven to 350 °F or 180 °C. Heat a splash of oil in a frying pan or skillet on medium heat, and pan sear the chicken for a few minutes until golden on both sides.
  • Place the chicken in a casserole dish, or on a sheet covered baking tray, along with pineapple slices, and bake in the oven for 5-15 minutes, or until the internal temperature of the chicken reaches 74 °C or 165 °F.
  • Remove the chicken from the oven, and leave it to rest for a few minutes before slicing.
  • Finely dice fresh chili and cilantro, and add these to a small container. Add white wine vinegar, olive oil and lime juice. Stir or shake to combine the ingredients. Optionally, you can add some black pepper to taste.
  • Dice the vegetables and place them in a bowl. Add roasted or grilled pineapple and chicken, and drizzle the dressing over the top. Serve the salad immediately!

EASY HAWAIIAN CHICKEN SALAD

Easy Hawaiian Chicken Salad image

I got this recipe from a woman that used to live in Hawaii and it is absolutely amazing! I use miracle whip for the recipe but it originally called for mayonnaise, which i don't care for so either can be used according to your preference. It is very good grilled on jalapeno cheese bread with havarti cheese.

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 6

2 lbs shredded chicken breasts
2 (6 ounce) cans crushed pineapple, drained
1 small red onion, diced
1 (8 ounce) bag sliced almonds
2/3 cup Miracle Whip or 2/3 cup mayonnaise
salt and pepper

Steps:

  • Boil chicken breasts until cooked thoroughly. Run cold water over chicken until cool then shred or cut.
  • Mix remaining ingredients in with chicken and enjoy!

Tips:

  • Use fresh, ripe pineapple for the best flavor. You can also use canned pineapple, but be sure to drain it well.
  • If you don't have macadamia nuts, you can substitute another type of nut, such as almonds or walnuts.
  • For a creamier salad, use full-fat mayonnaise. You can also use Greek yogurt or sour cream for a healthier option.
  • Add a pinch of cayenne pepper for a little bit of spice. You can also add other herbs and spices to taste, such as garlic powder, onion powder, or paprika.
  • Serve the salad immediately or chill it for a few hours before serving. The flavors will meld together and become even more delicious.
