EASY DELICIOUS HAMBURGER ORZO SOUP

Easy Delicious Hamburger Orzo Soup image

This recipe came from my mom who got it out of an old (1970's)cookbook of hers. I made it one night and just love it. It's perfect on a fall or winter night served with some fresh bread. This recipe makes quite a lot, and we never seem to have much left over.

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 8

1 lb lean ground beef
1 cup onion, chopped
6 cups water
6 teaspoons beef bouillon
1 (29 ounce) can crushed tomatoes or 1 (29 ounce) can diced tomatoes
1/2 cup orzo pasta
1 1/2 cups frozen peas corn and carrot mix
salt and pepper

Steps:

  • Brown ground beef with onion.
  • Drain.
  • In large pot place meat and onion, water, bouillon, and tomatoes.
  • Bring to a boil; cover and turn heat down to low.
  • Let simmer for 20 minutes.
  • Stir in orzo and frozen veggies, and salt and pepper.
  • Allow to simmer an additional 15-20 minutes or until orzo is done.
  • Serve hot with warm, buttered bread.

Tips:

  • Choose the right type of ground beef: For a rich and flavorful soup, use 80/20 ground beef. If you prefer a leaner soup, use 90/10 ground beef.
  • Brown the ground beef properly: Browning the ground beef is an essential step to develop flavor and depth. Make sure to break up the ground beef into small pieces and cook it over medium-high heat until it is browned on all sides.
  • Use a variety of vegetables: A variety of vegetables adds flavor, color, and nutrients to the soup. Some good choices include carrots, celery, onions, potatoes, and peas.
  • Don't overcook the vegetables: Overcooked vegetables will become mushy and lose their flavor. Cook the vegetables until they are tender but still retain their shape.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth. Homemade broth is always best, but you can also use a store-bought broth that is low in sodium.
  • Season the soup to taste: Season the soup with salt, pepper, and other herbs and spices to taste. You can also add a splash of Worcestershire sauce or soy sauce for extra flavor.
  • Serve the soup with your favorite toppings: Hamburger soup is traditionally served with crackers or bread, but you can also add other toppings such as shredded cheese, sour cream, or diced avocado.

Conclusion:

Hamburger soup is a hearty, flavorful, and easy-to-make soup that is perfect for a cold winter day. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying soup that the whole family will enjoy. So next time you're looking for a quick and easy meal, give hamburger soup a try. You won't be disappointed!
