HAM AND POTATO CASSEROLE (EASY AND ECONOMICAL!)

Ham and Potato Casserole (Easy and Economical!) image

Another old family recipe, handed down mother to daughter. I assume it is Irish, because it was from that side of the family, and it also makes a LOT! Fortunately, it is excellent reheated (and better the next day, too!) My mother always made this with leftover holiday ham, which makes it even more economical. Can be baked in the oven (very slow!) or cooked on the stovetop (my preferred choice).

Tips:

  • Choose the Right Ham: Opt for a flavorful ham that isn't too salty. Leftover ham or deli ham works well.
  • Enhance Flavor with Cheese: Incorporate a mix of shredded cheeses like cheddar, mozzarella, and Parmesan for a cheesy, gooey casserole.
  • Use Fresh Potatoes: Choose russet or Yukon Gold potatoes for their fluffy texture and ability to hold their shape during baking.
  • Create a Creamy Sauce: Make a creamy sauce using a combination of condensed cream of mushroom soup, milk, and sour cream for a rich and flavorful base.
  • Add Vegetables for Nutrition: Include chopped veggies like bell peppers, onions, or corn for added nutrition and texture.
  • Season Wisely: Don't shy away from seasonings. Use salt, pepper, garlic powder, and onion powder to elevate the overall flavor.
  • Top with Crunchy Croutons: Sprinkle some crunchy croutons or buttery bread crumbs on top of the casserole before baking for a golden-brown crust.
  • Bake Until Bubbly: Bake the casserole until it's bubbly and the potatoes are tender when pierced with a fork.

This ham and potato casserole is a hearty, comforting, and flavorful dish that's perfect for feeding a crowd. With its simple ingredients and easy-to-follow steps, it's a great option for busy weeknights or special occasions.
