1 cup coconut (shredded)
1 cup gum drops (plus more to top the cookies with if desired!)
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Preheat the oven to 375 degrees.
  • In a large bowl, sift together the flour, salt, baking powder and baking soda, set aside.

Omit the black gumdrops though...they can give the the dough an unappetizing dark green tint. There are several variations of this cookie already posted on RecipeZaar, but this is the exact quantities and ingredients of my mom's recipe for this particular cookie. My mom used to make a batch of these cookies for our birthday parties, and then wrapped a stack of 3 cookies in cellophane, then tied it with pretty curling ribbon which she put in treat bags that our friends took home with them at the end of the party. Whatever was left over went into our school lunch bags for an extra special treat.
