Time 20m

Number Of Ingredients 7

2 medium zucchini or yellow squash
3 Tbsp olive oil
1 Tbsp honey
2 tsp vinegar, preferably apple cider or red wine
1 tsp fresh thyme, removed from stems
2 pinch paprika
salt and pepper, to taste

Steps:

  • 1. Note: I like to cut and season these before prepping the rest of my food to be grilled. That way, I don't have to worry about cross-contamination with meat. Plus, it gives the seasoning time to soak in a bit. I also make sure these are one of the last things I grill because they don't require a lot of heat, so if you're grilling on wood or charcoal they can go on as the fire is starting to die down. If you're grilling meat, you can put these on as soon as you take your meat off. By the time these are done, it should have allowed enough time for your meat to properly rest, which means everything is done at the same time!
  • 2. Rinse off squash and quarter lengthwise, place on a large plate skin side down
  • 3. Drizzle squash with olive oil, honey, and vinegar.
  • 4. Sprinkle with thyme and paprika, then salt and pepper to taste.
  • 5. Place on grill skin side down over medium heat and turn occasionally. Cook until tender, about ten minutes.

Tips:

  • Choose the right squash: Look for small to medium-sized summer squash that are firm and have smooth skin. Avoid any squash that has bruises or blemishes.
  • Prep the squash: Wash the squash and cut off the ends. Then, slice the squash into 1/2-inch thick rounds or wedges.
  • Marinate the squash (optional): You can marinate the squash in a mixture of olive oil, herbs, and spices for extra flavor. This is especially helpful if you are grilling the squash over charcoal.
  • Grill the squash: Preheat your grill to medium-high heat. Brush the squash with olive oil and season with salt and pepper. Grill the squash for 3-4 minutes per side, or until it is tender and slightly charred.
  • Serve the squash: Grilled summer squash can be served as a side dish, main course, or appetizer. It is delicious on its own or with a dollop of sour cream, salsa, or guacamole.

Conclusion:

Grilling summer squash is a quick and easy way to enjoy this delicious and versatile vegetable. With its mild flavor and tender texture, grilled summer squash can be used in a variety of dishes. Whether you are grilling it as a side dish, main course, or appetizer, grilled summer squash is sure to be a hit.
