EASY GRILLED SUMMER SQUASH

Easy Grilled Summer Squash image

Grilling is all about spending time with your company and enjoying the weather. So, when it comes to my food choices, I want fast and easy so there's more time to be had with my friends and family. This seasoning and cooking method can easily be adapted to just about any vegetable.

Provided by Gar Campbell

Categories     Vegetables

Time 20m

Number Of Ingredients 7

2 medium zucchini or yellow squash
3 Tbsp olive oil
1 Tbsp honey
2 tsp vinegar, preferably apple cider or red wine
1 tsp fresh thyme, removed from stems
2 pinch paprika
salt and pepper, to taste

Steps:

  • 1. Note: I like to cut and season these before prepping the rest of my food to be grilled. That way, I don't have to worry about cross-contamination with meat. Plus, it gives the seasoning time to soak in a bit. I also make sure these are one of the last things I grill because they don't require a lot of heat, so if you're grilling on wood or charcoal they can go on as the fire is starting to die down. If you're grilling meat, you can put these on as soon as you take your meat off. By the time these are done, it should have allowed enough time for your meat to properly rest, which means everything is done at the same time!
  • 2. Rinse off squash and quarter lengthwise, place on a large plate skin side down
  • 3. Drizzle squash with olive oil, honey, and vinegar.
  • 4. Sprinkle with thyme and paprika, then salt and pepper to taste.
  • 5. Place on grill skin side down over medium heat and turn occasionally. Cook until tender, about ten minutes.

Tips:

  • Choose the right squash: For grilling, it's best to choose firm, medium-sized squash with smooth, unblemished skin. Avoid squash that is too soft or has bruises or cuts.
  • Prepare the squash properly: Before grilling, wash the squash thoroughly and pat it dry. Then, cut the squash into desired shapes and sizes. If you're grilling zucchini or yellow squash, you can simply slice them into rounds or halves. For larger squash like butternut or acorn squash, you may need to cut them into wedges.
  • Marinate the squash: Marinating the squash before grilling helps to infuse it with flavor and prevent it from drying out. You can use a simple marinade made with olive oil, herbs, and spices. Or, try a more flavorful marinade with ingredients like balsamic vinegar, soy sauce, or citrus juice.
  • Grill the squash over medium heat: Preheat your grill to medium heat before grilling the squash. This will help to prevent the squash from sticking to the grates and burning. Cook the squash for 5-10 minutes per side, or until it is tender and slightly charred.
  • Serve the squash immediately: Grilled squash is best served immediately after cooking. You can serve it as a side dish, main course, or even as an appetizer. Grilled squash can also be used in a variety of recipes, such as salads, soups, and pastas.

Conclusion:

Grilling squash is a healthy and delicious way to enjoy this versatile vegetable. With its slightly smoky flavor and tender texture, grilled squash is a great addition to any meal. Whether you're looking for a simple side dish or a flavorful main course, grilled squash is sure to please everyone at the table.
