EASY GRILLED LEMON CHICKEN

Easy Grilled Lemon Chicken image

I learned to make this when I was vacationing in Bermuda after high school. It has been 18 years, and this is still one of our favorite dishes ever! My children ALL love it - from the toddler to the teen! And it's so easy that even my non-cooking husband can whip this up! The longer you marinate the chicken, the better it is!

Yield 4

Number Of Ingredients 5

½ cup fresh lemon juice
½ cup soy sauce
½ teaspoon ground ginger
¼ teaspoon ground black pepper
4 (6 ounce) skinless, boneless chicken breast halves

Steps:

  • Rinse chicken breasts and pat dry with paper towels. Stir together the lemon juice, soy sauce, ginger, and black pepper in a bowl; pour into a large, resealable plastic bag. Add the chicken breasts, seal the bag, and massage to evenly coat chicken with lemon juice mixture. Place in refrigerator to marinate at least 20 minutes, or up to 24 hours.
  • Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Drain and discard marinade from the bag, and place chicken on preheated grill. Cook until chicken is no longer pink and juices run clear, 6 to 8 minutes on each side.

Tips:

  • Use a whole lemon for grilling. This will help infuse the chicken with more flavor and prevent it from drying out.
  • Score the chicken breast before grilling. This will help the marinade penetrate the chicken and cook it more evenly.
  • Use a flavorful marinade. The marinade is what will give the chicken its flavor, so be sure to use a mixture that you enjoy. The recipe in the article uses a simple marinade made with olive oil, lemon juice, garlic, and oregano.
  • Grill the chicken over medium heat. This will help prevent the chicken from burning and allow it to cook through evenly.
  • Cook the chicken until it reaches an internal temperature of 165 degrees Fahrenheit. You can check the temperature with a meat thermometer.
  • Let the chicken rest before serving. This will help the juices redistribute throughout the chicken and make it more tender.

Conclusion:

Grilled lemon chicken is a delicious and easy-to-make dish that is perfect for a summer cookout. The lemon marinade infuses the chicken with flavor and prevents it from drying out, and the grilling process gives the chicken a nice smoky flavor. Serve the chicken with your favorite sides, such as grilled vegetables, rice, or pasta.
