Fantastic bars that have a lot of flexibility. You can adapt the recipe to your liking. Great for hikes, long road trips and camping as they store well and keep fairly long - unless you eat them all! Use any combination of chocolate chips, dried fruit, coconut, pecans, almond slices, or any other tidbits you'd like in a granola bar.

1/4 cup butter
1/4 cup honey
Less than half teaspoon baking soda
Less than half teaspoon vanilla extract
Chopped almonds
Chopped walnuts
Chopped dried strawberries

Steps:

  • In a bowl mix oats, flour and baking soda. Add butter and honey and mix them well. Finally, add the dried fruits and mix well. Apply butter to the baking tray and transfer the granola mix to it. With the help of a spatula you can shape it in a square. Flatten the mixture. Bake it for 15 minutes at 350°F or till it turns golden brown.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your granola bars will be.
  • Don't overmix the ingredients. Overmixing will make the granola bars tough.
  • Press the granola bars firmly into the pan. This will help them hold together better.
  • Chill the granola bars before cutting them. This will make them easier to cut and less likely to crumble.
  • Store the granola bars in an airtight container at room temperature. They will keep for up to 2 weeks.
