1 tablespoon butter
1 (3 pound) sugar pumpkin - peeled, seeded, and cut into matchbox-size pieces
2 tablespoons brown sugar
1 tablespoon yellow curry powder
20 ounces chicken broth
2 tablespoons pumpkin seed oil
sour cream
toasted pumpkin seeds

Steps:

  • Melt the butter in a large pot over medium heat. Add the pumpkin, brown sugar, and curry powder to the butter; cook and stir until the pumpkin caramelizes, 6 to 10 minutes. Pour the chicken broth over the mixture; bring to a boil, and cook until the pumpkin is tender, about 20 minutes more.
  • Pour the soup into a blender, filling the pitcher no more than halfway. Hold the lid of the blender in place with a towel; start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Process in batches until smooth.
  • Garnish each portion of soup with 1 teaspoon pumpkin seed oil, a dollop of sour cream, and a few pumpkin seeds.

Tips:

  • Choose the right pumpkin: Look for a sugar pumpkin or pie pumpkin, which are both known for their sweet and creamy flavor. Avoid using carving pumpkins, as they are typically stringy and less flavorful.
  • Roast the pumpkin before using: Roasting the pumpkin caramelizes the sugars and intensifies its flavor. You can roast the pumpkin in the oven at 425°F for about 45 minutes, or until it is tender and browned.
  • Use a good quality vegetable broth: The vegetable broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is low in sodium and has a rich, flavorful taste.
  • Don't overcook the soup: The soup should be simmered gently for about 30 minutes, or until the vegetables are tender. Overcooking the soup can make it mushy and bland.
  • Season the soup to taste: Once the soup is finished cooking, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or spices to taste.

Conclusion:

This easy gourmet pumpkin soup recipe is a delicious and versatile dish that can be enjoyed for lunch or dinner. It's also a great way to use up leftover pumpkin puree. With its smooth and creamy texture and rich, flavorful taste, this soup is sure to be a hit with everyone who tries it.
