Time 1h55m

Yield 6

Number Of Ingredients 13

¼ cup unsalted butter
3 large yellow onions, coarsely chopped
1 teaspoon kosher salt
2 sprigs fresh thyme
1 bay leaf
¼ cup dry sherry
1 tablespoon sherry vinegar
freshly ground black pepper to taste
3 cups beef broth
2 cups chicken broth
1 cup water
6 (1/4 inch thick) slices French baguette, toasted
6 ounces Gruyere cheese, shredded, or to taste

Steps:

  • Melt butter in a large skillet over low heat. Cook onions with salt, stirring occasionally, until the onions are soft and golden, about 40 to 45 minutes.
  • Mix in thyme sprigs and bay leaf. Pour in sherry wine and sherry vinegar, and stir in black pepper. Pour in beef broth, chicken broth, and water. Stir to combine, and allow the soup to simmer gently for one hour.
  • Ladle soup into heat-proof crocks. Place a slice of toasted baguette on top of each crock, and sprinkle 1 ounce of shredded Gruyere cheese per serving.
  • Preheat oven's broiler and set the oven rack about 6 inches from the heat source. Place the filled crocks on a baking sheet, and broil until the cheese is golden and bubbly, about 1 minute.

Tips:

  • Use a variety of onions: This will give your soup a more complex flavor. Yellow onions are a good all-purpose choice, but you can also add red onions for a bit of sweetness or white onions for a sharper flavor.
  • Caramelize your onions slowly and patiently: This is the key to a great French onion soup. The onions should be cooked until they are a deep golden brown and very soft. This will take about 30 minutes over medium-low heat.
  • Use a good quality beef broth: This will also contribute to the flavor of your soup. Look for a broth that is made with real beef bones, not just bouillon cubes.
  • Add a splash of white wine: This will help to deglaze the pan and add a bit of acidity to the soup. You can use any type of white wine, but a dry white wine is a good choice.
  • Top your soup with plenty of cheese: This is what really makes French onion soup so delicious. Use a combination of Gruyère and Parmesan cheese for the best flavor.
  • Serve your soup immediately: French onion soup is best when it is served hot and bubbly. So make sure to have your bowls and spoons ready before you start cooking.

Conclusion:

French onion soup is a classic dish that is perfect for a cold winter night. It is rich, flavorful, and comforting. And it is also surprisingly easy to make. So next time you are looking for a delicious and satisfying meal, give this recipe a try.
