Steps:
- Heat the oven to 180C/160C fan/gas 4. Line a muffin tin with six muffin cases. Sieve the flour, cocoa and baking powder into a medium bowl. Mix together the egg, sugar, oil and milk together in a jug, then gradually pour into the dry ingredients (add chocolate chips now to make double chocolate muffins, if you like) and mix until combined.
- Spoon the mixture evenly into the cake cases and bake for 20-25 mins until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool.
- Meanwhile, gradually mix ½-1 tbsp water into the icing sugar until you have a loose consistency that's not too runny. Drizzle the icing over the muffins once cool.

Steps:
- Prep: Preheat the oven to 425 F (220 C). Line a muffin tin with muffin liners or spray with nonstick spray.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt.
- Mix the Wet Ingredients: In a separate bowl, whisk together the egg, milk, vanilla, and oil until well combined.
- Combine Wet & Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir with a spoon or rubber spatula until just combined. This process will go quickly, and should only take about 10 stirs to complete. Fold in the chocolate chips at this point. Do not over-mix your batter or your muffins will be dense and dry.
- Divide the batter between the muffin cups filling them almost all the way up. Top with more chocolate chips if desired.
- Bake at 425 F for about 10 minutes and then turn the oven heat down to 350 F (175 C) for about 5 more minutes or until a toothpick inserted in the center comes out with moist crumbs.

Tips:
- Mise en Place: Before starting, measure and prepare all ingredients and line muffin tins with liners to save time and ensure smooth baking.
- Proper Mixing: Do not overmix the batter, as this can result in tough muffins. Mix only until the ingredients are well combined to maintain a light and fluffy texture.
- Filling the Muffin Tins: Fill each muffin liner about 2/3 full to allow for expansion during baking. This prevents overflowing and ensures evenly baked muffins.
- Baking Time and Temperature: Bake the muffins at the specified temperature for the recommended time. Check for doneness by inserting a toothpick into the center of a muffin; if it comes out clean, the muffins are ready.
- Cooling and Storing: Allow the muffins to cool in the muffin tins for a few minutes before transferring them to a wire rack to cool completely. Store leftover muffins in an airtight container at room temperature for up to 3 days or freeze them for up to 3 months.
Conclusion:
These chocolate muffins are a delightful treat that can be enjoyed by kids and adults alike. With their rich chocolate flavor, tender crumb, and easy-to-follow recipe, they are perfect for a quick breakfast, afternoon snack, or special occasion. Remember to follow the tips mentioned above to ensure a successful baking experience and delicious results.
