Yield 4 serving(s)

Number Of Ingredients 9

2 medium mashed bananas (you can play around with the amount)
1 egg
1 cup soymilk
1 cup rice flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
1/4 teaspoon cinnamon (optional and to taste)
1/4 teaspoon pure vanilla extract (optional and to taste)

Steps:

  • Mix first three (wet) ingredients.
  • Mix next four (dry) ingredients.
  • Mix dry ingredients slowly to wet ingredients till everything is blended well.
  • Heat pan to 4 (med), add oil, cook test pancake.
  • Lower heat to 1 or min,.
  • Use a drop of oil for each group of pancakes on the pan. They tend to stick a little.
  • Use a lid to cook pancake inside out before the outside burns.
  • MUST COOK ON LOW or they will burn!

Tips:

  • Use the right ingredients. Make sure you have all the ingredients you need and that they are fresh. Use high-quality flour, baking powder, and baking soda.
  • Measure your ingredients accurately. This is important for getting the right consistency in your pancakes. Use a kitchen scale to measure your ingredients if you can.
  • Mix your ingredients gently. Over-mixing can make your pancakes tough. Mix your ingredients just until they are combined.
  • Let your batter rest for a few minutes. This will allow the baking powder and baking soda to activate and make your pancakes fluffy.
  • Cook your pancakes over medium heat. This will help them cook evenly without burning.
  • Flip your pancakes only once. Flipping them too often can make them tough. Flip your pancakes once when bubbles start to form around the edges.
  • Serve your pancakes immediately. Pancakes are best when they are served hot off the griddle. You can top them with butter, syrup, fruit, or whipped cream.

These are just a few tips for making easy and fluffy pancakes. With a little practice, you'll be able to make perfect pancakes every time. So what are you waiting for? Give this recipe a try today!
