1/4 cup olive oil
10 slices French bread (1 inch thick)
1 package (4 ounces) crumbled feta cheese
2 to 3 garlic cloves, minced

1 large tomato, seeded and chopped

Steps:

  • Preheat oven to 350°. In a small bowl, combine butter and oil; brush onto both sides of bread. Place on a baking sheet. 1 French baguette, cut into 1/2 inch thick circles
8 plum tomatoes, diced
1 cup chopped fresh basil
½ red onion, minced
freshly ground black pepper
3 cloves garlic

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.

2 teaspoons extra virgin olive oil
2 cloves garlic, coarsely crushed
nonstick cooking spray
2 plum tomatoes, finely chopped

Steps:

  • Preheat oven to 500 degrees F.
  • Brush bread with oil.
  • Rub soft side with garlic.

It's always better on the second day. Not only is this great on a baguette, I love to put a little on my eggs or over chicken.

8 ounces feta cheese
6 large fresh basil leaves
4 ounces olive oil

Pam cooking spray
