1 (10 ounce) package flour tortillas
1 (15 ounce) can black beans, rinsed and drained
1 (6 ounce) can sliced black olives, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.

When you don't have a lot of time or money. I made this for my family for around a dollar per serving. If the only Mexican food your kids will touch is cheese quesadillas (cheese melted on a tortilla), give this a try as a "step up". My picky picky DD was okay with cheese enchiladas when we told her it was cheese in a tortilla with a sauce on top. Now she has been known to eat spinach enchiladas and chicken enchiladas! :) She gave this recipe two thumbs up. :)

2 cups shredded cheese (whatever floats your boat, I used a preshredded Colby or Monterey Jack blend)
3 ounces cream cheese, softened
1 -2 teaspoon garlic powder
1 -2 teaspoon instant minced onion (or a smidge of grated fresh)
12 corn tortillas
15 ounces enchilada sauce
1/2 cup more shredded cheese

Steps:

  • First, you want to mix the first four ingredients together until they are really well combined. Seriously, you will not see any little shreds of cheese and it will have the texture of stiff play dough (this is important).
  • Preheat your oven to 350 and grab a pan. I used an 11x7 inch oval baking dish, but you can also use an 8inch square.
  • Pour about 1/4 of the enchilada sauce into the bottom of the pan and swirl the pan until the bottom is coated.
  • Reach in with your clean hands and grab about 2 tablespoons of cheese mixture in your hands and shape into a log. Roll a tortilla around this log and place in the pan. Repeat for the rest of the cheese and tortillas.
  • Pour the rest of the sauce on top, spreading it to cover.
  • Sprinkle the last 1/2 cup of cheese on top, and place in the oven. Bake 20-30 minutes or until hot and bubbly.
  • For OAMC: Freeze before cooking, thaw in refrigerator and bake according to directions.

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish, and pour the salsa into the bottom of the dish. Set aside.

1/8 teaspoon ground cumin
1 (8-ounce) block medium cheddar cheese, shredded
1/4 cup finely diced onion
Sour cream, hot taco sauce, chopped green onions

Steps:

  • Preheat oven to 350° F. Lightly spray an 8 x 8" baking dish with cooking spray. In a medium mixing bowl, stir together the chili, a little salt and black pepper, and the cumin. Spread a thin layer of the chili mixture in the bottom of the baking dish, just enough to cover. Reserve about 1/2 cup of the shredded cheese for the top. 1 lb ground beef or 1 lb boneless skinless chicken breast
1/4 cup chopped onion
1 teaspoon garlic powder (I prefer fresh minced)
1 tablespoon Worcestershire sauce
1 (8 ounce) can tomato sauce
1 teaspoon paprika
1 teaspoon oregano
2 teaspoons chili powder (more or less for your taste)
1/2 teaspoon cumin
1/2 teaspoon black pepper
3 cups shredded cheese (I like the jack or cheddar combos)
1 (10 ounce) can enchilada sauce (I prefer the green sauce)
olive (optional)
12 corn tortillas
oil

Steps:

  • If using chicken, boil chicken in water.
  • Then rinse and shred with fork.
  • Add onion and garlic.
  • If using ground beef, brown with onion and garlic, drain.
  • Add next 7 ingredients (worcestershire sauce through black pepper).
  • In another skillet, heat oil.
  • Add tortillas, one at a time, for 10 seconds on each side.
  • Drain on paper towel.
  • In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  • Fill each tortilla with a spoonful of meat mixture.
  • Cheese, onions, and/or olives can be put inside each enchilada at this time, if desired.
  • Roll tortilla and place seam side down in pan.
  • Continue with remaining tortillas.
  • Pour remaining enchilada sauce over tortillas and top with cheese (additional olives may be added if desired).
  • At this time, pan may be refrigerated for several hours or overnight.
  • Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).
  • Top with sour cream.

12 flour tortillas (8 inches)

Steps:

  • In a large skillet, saute onion, green pepper and jalapeno in oil until onion in tender. Stir in chicken. Remove from the heat; set aside. , For sauce, melt butter in a saucepan. Stir in flour until smooth. Add broth, cumin, garlic powder, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in sour cream. Add 1 cup on the sauce to chicken mixture. Spoon 1/2 cup chicken mixture on each tortilla; roll up and place seam side down in a greased 13-in. x 9-in. baking dish. 3 tablespoons vegetable oil
3 cloves garlic, minced
2 tablespoons chili powder
2 tablespoons cocoa powder
1 teaspoon ground cinnamon
1 teaspoon ground cumin
2 tablespoons tomato paste
One 6-ounce can tomato sauce
1 cup chicken broth
1 tablespoon peanut butter
2 teaspoons brown sugar
Kosher salt
Eight 6-inch flour tortillas
2 cups shredded cooked chicken, skin removed
1 cup shredded Monterey Jack
1/4 cup Mexican crema or sour cream
1/2 cup crumbled queso fresco
2 tablespoons toasted sesame seeds
Cilantro leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • For the sauce: Heat the oil in a medium skillet over medium heat. Add the garlic and cook until fragrant, about 2 minutes. Add the chili powder, cocoa powder, cinnamon and cumin and saute until toasted and fragrant, about 2 more minutes. Add the tomato paste and cook 1 minute, then add the tomato sauce and chicken broth and whisk until smooth and combined. Stir in the peanut butter, brown sugar and a pinch of salt. Bring to a simmer and cook for 10 minutes to thicken. Remove from the heat.
  • For the enchiladas: Wrap the tortillas in a damp paper towel and microwave in 30-second internals, just until warmed through and pliable. Add the chicken to a medium bowl and pour about 1/2 cup of the mole sauce over top; toss to coat the chicken. Spread another 1/2 cup of the mole sauce in the bottom of an 11-by-7-inch baking dish.
  • Place one warmed tortilla flat on a clean work surface. Top with 1/4 cup of the chicken filling and 2 tablespoons of the shredded cheese. Roll up and place seam side down in the prepared baking dish. Repeat with the remaining tortillas, filling and shredded cheese. Pour the remaining mole over the top of the rolled tortillas. Cover the dish with foil and bake until the cheese is melted and the mole is bubbling, 25 to 30 minutes.
  • Remove from the oven and top with the crema, queso fresco and sesame seeds. Serve garnished with cilantro leaves.

12 small corn tortillas
1/4-1/2 cup vegetable oil
1 onion, chopped

  • Quickly cook tortillas in hot oil until softened. Drain well on paper towels. Set aside.

Steps:

  • Heat oven to 350° F. Spray bottom and sides of 13 x 9-inch baking dish with cooking spray. Spread 1/2 cup of the enchilada sauce in bottom of baking dish.

7 ounces chicken broth
4 boneless skinless chicken breasts
8 ounces diced canned green chili peppers
2 cloves garlic
1 medium onion, chopped
16 ounces cheddar cheese
12 corn tortillas

Steps:

  • Cut chicken into small bite-sized pieces.
  • Brown in frying pan.
  • In a large sauce pan over medium heat combine the cream of mushroom soup and chicken broth.
  • Then add the garlic, onion, green chile.
  • Preheat oven to 350 degrees.
  • Cover the bottom of a 12x9 baking dish with a thin layer of the sauce.
  • Cover with half of the tortillas.
  • Put half of the cooked chicken on top of the tortillas.
