4 skinless, boneless chicken breast halves
garlic salt to taste
18 (6 inch) corn tortillas, torn in half
1 (28 ounce) can green chile enchilada sauce
1 (16 ounce) package shredded Monterey Jack cheese
1 (8 ounce) container reduced fat sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Season chicken with garlic salt. Arrange in the prepared baking dish. Bake 45 minutes in the preheated oven, until no longer pink and juices run clear. Cool, shred, and set aside.
  • With metal tongs, char each tortilla half over the open flame of a gas stove burner for about 1 minute, until lightly puffed.

4 cooked skinless, boneless chicken breast halves, chopped
8 ounces sour cream
½ cup chopped green onions
3 cups salsa
1 (4 ounce) can diced green chiles
4 cups shredded Monterey Jack cheese
12 (8 inch) flour tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • In a medium bowl combine the soup, chicken, sour cream and green onions. Mix together. In another small bowl combine the salsa and green chile peppers and mix.

I was looking for a quick and different way to use the leftover shredded beef cooked in a crock pot the day before. I came up with this recipe which is quick and easy without having to roll each tortilla individually . My husband doesn't like corn tortillas or red sauce so I used green sauce and flour tortillas and layered them in a 8 1/2 inch casserole dish that fit the torrillas perfectly. I knew it was a hit when he went back for a second and third helping! It also tastes great left over the next day. You could also make it with shredded chicken. (Cooking the beef is not included in prep time)

2 cups shredded beef
1 (4 ounce) can diced green chilies
1 (19 ounce) can green enchilada sauce
1 (10 1/2 ounce) can cream of mushroom soup
2 cups shredded Mexican blend cheese (or other cheese of your choice)

sour cream (optional)

Steps:

  • In large frying pan or sauce pan, combine shredded beef, diced green chiles, half of the green enchilada sauce and full can of mushroom soup.

We always had a fourth of a bag left because by then they would be all crushed and the kids wouldn't eat them. One day my husband gave me a challenge to try to come up with some way to use the crushed chips, at the same time one of my grandsons decided he was going vegetarian. So I took it on as a double challenge and also decided I could only use what I had on hand. This is how the recipe was born. Ingredients can be adjusted to fit whatever size casserole dish you might want to use. Serve with a dollop of sour cream and a side of mexican rice (optional) I make it in a large alluminum tray (20 3/4"L x 12 13/16"W x 3 3/8"D) the qty of the ingredients are for this pan but can be adjusted for any size casserole pan.

2 (20 ounce) packages Simply Potatoes Diced Potatoes with Onion
6 cups pre-shredded mozzarella cheese or 6 cups monterey jack cheese
3 cups Cotija cheese or 3 cups parmesan cheese

  • Pour a third of one can enchilada sauce on the bottom of the pan, or just enough to coat the bottom.

2 cups grated sharp cheddar cheese
1 (14 ounce) bag plain Doritos (pick your flavor)

8 ounces tomato sauce
2 tablespoons diced onions

I found that when I went to the trouble of rolling up enchiladas, people would wreck them when serving themselves, or only want half of one. This casserole is easier to prepare and serve!

12 corn tortillas
1 (19 ounce) can enchilada sauce
1 (15 ounce) can black beans (I use Goya Black Bean Soup)
1 (12 ounce) package vegetarian ground beef, substitute (Quorn, Morning Star or Boca)
4 -8 ounces cheddar cheese (or combination) or 4 -8 ounces monterey jack cheese, grated (or combination)

Steps:

  • Stack 6 tortillas and slice into 1/2 inch strips, then cut into thirds or quarters in opposite direction.
  • Warm slightly less than 1/2 the can of enchilada sauce in a large glass bowl in microwave (or on stove, in pan or skillet).
  • Add tortilla strips and let sit for a couple of minutes. Warm sauce gently or tortillas strips will disintegrate.
  • Spread in bottom of 9x9" baking pan.
  • Defrost vegetarian crumbles and heat with beans.
  • Spread over layer of tortilla strips.
  • Sprinkle half the cheese over the bean mix.
  • Cut up remaining tortillas and repeat warming process with remaining sauce. Layer over beans, and top with remaining cheese.

2 tablespoons olive oil
1/2 onion, chopped
1 (4 ounce) can diced green chilies
1 (3 7/8 ounce) can sliced olives, drained
2 chicken breast halves, cooked and chopped
1 (19 ounce) can green enchilada sauce
8 -10 corn tortillas, lightly sauteed (6-inch)
2 cups shredded monterey jack cheese
sour cream
diced avocado

Steps:

  • Heat oil in a small frying pan. Saute onion until tender. Add green chilies, olives, and chicken, and heat through. Remove from heat and moisten with a little enchilada sauce.
  • Coat an 8" baking pan with cooking spray, and pour a thin layer of enchilada sauce on the bottom. Line bottom with two tortillas, tearing to fit. Sprinkle with 1/3 chicken mixture and 1/4 of cheese. Drizzle with 1/4 of remaining sauce.
  • Repeat layers two more times. Top with remaining 2 tortillas, cheese, and sauce.
  • Cover pan with foil and bake at 350F until hot through - about 10 minutes. Remove foil and bake 10 more minutes, until cheese is toasty. Let set 10 minutes, and serve garnished with sour cream and avocado as desired.

6 cups cooked chicken, cut into bite-size pieces
6 corn tortillas (use the small ones for this)
1 large onion, chopped
1 -2 tablespoon fresh minced garlic
3 -4 tablespoons oil
1 (4 ounce) can green chilies, chopped
1 (10 ounce) can cream of mushroom soup (undiluted)
1/4 cup grated parmesan cheese
2 teaspoons louisianna hot sauce (or to taste)
2 1/4 cups grated cheddar cheese, divided
2 1/4 cups grated mozzarella cheese, divided
1 1/2 cups salsa

Steps:

  • Set oven to 325 degrees.
  • Grease a 1-1/2 quart casserole dish.
  • Cut the tortillas into 6 pieces each (you should have 36 smaller pieces).
  • Heat oil in the skillet; saute the onion and garlic for about 4 minutes.
  • Mix the soup with the hot sauce adjusting the amount of hot sauce to taste and Parmesan cheese.
  • Add in the chilies, mushroom soup and 1-1/4 cups EACH mozza and cheddar; cook slowly until the cheese melts.
  • Line the casserole dish with half of the corn tortilla pieces, then top/dollup with half of the salsa about 3/4 cup) spread the salsa with a spoon as best you can.
  • Layer HALF of the chicken on top of the salsa, then HALF of the soup/cheese mixture.
  • Repeat the layers (ending up with the soup/cheese mixture on top).
  • Bake for about 35 minutes, remove from oven then top with the remaining mozza and cheddar cheese, return to oven for about 10 minutes, or until the cheese has melted.
  • Let stand for 10 minutes before serving.
