4 skinless, boneless chicken breast halves
garlic salt to taste
18 (6 inch) corn tortillas, torn in half
1 (28 ounce) can green chile enchilada sauce
1 (16 ounce) package shredded Monterey Jack cheese
1 (8 ounce) container reduced fat sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Season chicken with garlic salt. Arrange in the prepared baking dish. Bake 45 minutes in the preheated oven, until no longer pink and juices run clear. Cool, shred, and set aside.
  • With metal tongs, char each tortilla half over the open flame of a gas stove burner for about 1 minute, until lightly puffed.
  • Pour about 1/2 inch enchilada sauce in the bottom of a medium baking dish, and arrange 6 tortillas in a single layer. I was looking for a quick and different way to use the leftover shredded beef cooked in a crock pot the day before. I came up with this recipe which is quick and easy without having to roll each tortilla individually . My husband doesn't like corn tortillas or red sauce so I used green sauce and flour tortillas and layered them in a 8 1/2 inch casserole dish that fit the torrillas perfectly. I knew it was a hit when he went back for a second and third helping! It also tastes great left over the next day. You could also make it with shredded chicken. (Cooking the beef is not included in prep time)

1 (19 ounce) can green enchilada sauce

5-Ingredient Fix Contest Entry. I have a large family, (12 of us) and I buy the large bags of tortilla chips from a grocery warehouse. We always had a fourth of a bag left because by then they would be all crushed and the kids wouldn't eat them. One day my husband gave me a challenge to try to come up with some way to use the crushed chips, at the same time one of my grandsons decided he was going vegetarian. So I took it on as a double challenge and also decided I could only use what I had on hand. This is how the recipe was born. Ingredients can be adjusted to fit whatever size casserole dish you might want to use. Serve with a dollop of sour cream and a side of mexican rice (optional) I make it in a large alluminum tray (20 3/4"L x 12 13/16"W x 3 3/8"D) the qty of the ingredients are for this pan but can be adjusted for any size casserole pan.

1 (19 ounce) can enchilada sauce
1 (15 ounce) can black beans (I use Goya Black Bean Soup)
1 (12 ounce) package vegetarian ground beef, substitute (Quorn, Morning Star or Boca)
4 -8 ounces cheddar cheese (or combination) or 4 -8 ounces monterey jack cheese, grated (or combination)

Steps:

  • Stack 6 tortillas and slice into 1/2 inch strips, then cut into thirds or quarters in opposite direction.
  • Warm slightly less than 1/2 the can of enchilada sauce in a large glass bowl in microwave (or on stove, in pan or skillet).
  • Add tortilla strips and let sit for a couple of minutes. Warm sauce gently or tortillas strips will disintegrate.
  • Spread in bottom of 9x9" baking pan.
  • Defrost vegetarian crumbles and heat with beans.
  • Spread over layer of tortilla strips.

1/2 onion, chopped
1 (4 ounce) can diced green chilies
1 (3 7/8 ounce) can sliced olives, drained
2 chicken breast halves, cooked and chopped
1 (19 ounce) can green enchilada sauce
8 -10 corn tortillas, lightly sauteed (6-inch)
2 cups shredded monterey jack cheese
sour cream
diced avocado

Steps:

  • Heat oil in a small frying pan. Saute onion until tender. Add green chilies, olives, and chicken, and heat through. Remove from heat and moisten with a little enchilada sauce.
  • Coat an 8" baking pan with cooking spray, and pour a thin layer of enchilada sauce on the bottom. Line bottom with two tortillas, tearing to fit. Sprinkle with 1/3 chicken mixture and 1/4 of cheese. Drizzle with 1/4 of remaining sauce.

This is a recipe that my mom got from a neighbor 20 years ago. Its easy to make and so delicious! We still make this often as it has become a family favorite! Best thing is if you are watching what you eat, the ingredients in this recipe can be switched to low fat items with the same result. From my kitchen to yours!! Enjoy!

1 lb ground beef or 1 lb pork
1 (7 ounce) can Rotel tomatoes & chilies (i like the hot ones but if you don't care for hot use mild.)
1 (10 3/4 ounce) can cream of mushroom soup (regular or fat free)
1 (10 3/4 ounce) can cream of chicken soup (regular or fat free)
1 (1 1/4 ounce) package taco seasoning
1 (16 ounce) bag of four-cheese Mexican blend cheese
1 (14 ounce) bag corn tortillas

Steps:

  • brown your ground meat of choice and drain.
  • then add taco seasoning, rotel tomatoes and chiles, and the two cans of soup. stir together until well blended and simmer for 5 minutes.
  • remove from heat.
  • cut or tear corn tortillas into fourths and layer bottom of 9.5 x 13.5 casserole dish or baking pan.
  • then add a layer of meat mixture.
  • next sprinkle some of the shredded cheese.
  • then repeat.(tortillas, meat mixture, cheese.) the same as you would layer lasagna.
  • the last layer should be corn tortilla topped with a liberal amount of shredded cheese.
  • preheat oven to 350, place casserole dish in oven and bake for approximately 20 to 25 minutes until cheese on top is melted. remove from oven and enjoy!
  • i like to top mine with sour cream and gaucomole! YUMMY!

You can use cooked turkey in place of chicken, this recipe can be doubled and baked in a larger casserole, also 3 large corn tortillas can be used in place of 6 small.

6 cups cooked chicken, cut into bite-size pieces
6 corn tortillas (use the small ones for this)
1 large onion, chopped
1 -2 tablespoon fresh minced garlic
3 -4 tablespoons oil
1 (4 ounce) can green chilies, chopped
1 (10 ounce) can cream of mushroom soup (undiluted)
1/4 cup grated parmesan cheese
2 teaspoons louisianna hot sauce (or to taste)
2 1/4 cups grated cheddar cheese, divided
2 1/4 cups grated mozzarella cheese, divided
1 1/2 cups salsa

Steps:

  • Set oven to 325 degrees.
  • Grease a 1-1/2 quart casserole dish.
  • Cut the tortillas into 6 pieces each (you should have 36 smaller pieces).
  • Heat oil in the skillet; saute the onion and garlic for about 4 minutes.
  • Mix the soup with the hot sauce adjusting the amount of hot sauce to taste and Parmesan cheese.
  • Add in the chilies, mushroom soup and 1-1/4 cups EACH mozza and cheddar; cook slowly until the cheese melts.
  • Line the casserole dish with half of the corn tortilla pieces, then top/dollup with half of the salsa about 3/4 cup) spread the salsa with a spoon as best you can.
  • Layer HALF of the chicken on top of the salsa, then HALF of the soup/cheese mixture.
  • Repeat the layers (ending up with the soup/cheese mixture on top).
  • Bake for about 35 minutes, remove from oven then top with the remaining mozza and cheddar cheese, return to oven for about 10 minutes, or until the cheese has melted.
  • Let stand for 10 minutes before serving.

2 Cups Rotisserie Chicken, diced or shredded
1 & 1/2 Cups Salsa
4 Ounces Cream Cheese
1 (10 oz.) Can Enchilada Sauce
1 (15 oz.) Can Pinto Beans, rinsed and drained
1 (4 oz.) Can Green Chilies
10 About 10 six inch Tortillas (you can use flour, corn or wheat)
1 Cup Shredded Cheese (you can use a Mexican Cheese Blend or Cheddar)
1 (2.25 oz.) Can Sliced Black Olives
1/4 Green Onions, Diced

Steps:

  • 1. Preheat oven to 350 degrees. 2. Spread 1/2 Cup of the Enchilada Sauce into the bottom of a 13 x 9 dish, set aside. 3. Put the Cream Cheese and Salsa in a large saucepan. Cook and stir over medium heat until the Cream Cheese has melted and blended with the Salsa. 4. Add the Chicken, Chilies and Beans to the Salsa mixture and stir over medium heat for about 2 minutes then remove from stovetop. 5. Time to assemble the Enchiladas. Put 1/2 cup of the Chicken mixture down the middle of each Tortilla then roll up the Tortillas and place seam side down in the prepared pan. 6. Now spread the remaining Enchilada Sauce over the top of the rolled Tortillas in the baking dish. 7. Sprinkle the Cheese over the top of the Enchiladas, then sprinkle the Black Olives and Green Onions over the Cheese. 8. Cover the pan with foil and bake for 25-30 minutes. All ovens cook differently so check the Enchiladas at 20 minutes. They should be heated through, the cheese melted and the sauce a little bubbly. ~Serve your Enchiladas with Shredded Lettuce, Sour Cream and additional Salsa. 1 (10-count) package Old El Paso™ Flour Tortilla Small
1 (10-ounce) can Old El Paso™ red enchilada sauce
1 (14-ounce) can black beans, rinsed and drained
1 (4-ounce) can Old El Paso™ chopped green chiles
2 cups shredded cooked chicken (*or other desired filling, see options below)
1/2 cup whole-kernel corn
1 cup shredded Mexican-blend cheese
1/4 cup chopped fresh cilantro
1/4 cup thinly-sliced green onions

Steps:

  • Heat oven to 350°F.
  • Tuck each of the tortillas into the cups of a standard-sized muffin pan, gently pleating the edges of the tortillas so that they fit snugly inside each cup, careful not to let the tortillas fold too closely into the middle (since we'll need an opening for the filling later). Bake for 10-12 minutes, or until the tortilla cups have hardened slightly on all sides. Remove and set aside.
  • While the tortillas are baking, combine the enchilada sauce, black beans, green chiles, chicken, and corn together in a large mixing bowl. Toss until the ingredients are evenly combined.
  • Once the tortilla cups are ready, carefully spoon the filling into each cup until it is filled nearly to the brim. Place a pinch of cheese on top of each tortilla cup. Then return the pan to the oven and bake for 15 minutes, or until the cheese is melted and the filling is warmed through.
  • Remove from the oven, and sprinkle the top of each cup evenly with cilantro and green onions. Serve warm.
