Steps:
- Preheat the oven to 275 degrees F.
- Generously salt and pepper the chuck roast.
- Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
- Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
- If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
- With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
- Add in the onions and the carrots, along with the fresh herbs.
- Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

Steps:
- 1. Preheat oven to 325 degree F. Line a small roaster with foil..I sometimes skip the foil.

- 3. Fold foil over roast, cover and bake for 3 - 3 1/2 hours or until tender. The aroma in the house will be to die for. If you want more gravy, double the soup and water. Enjoy!
Tips:
- Choose the right cut of meat: Chuck roast is a tough cut of meat, but it becomes tender and flavorful when cooked slowly. Other good options include brisket, rump roast, and short ribs.
- Brown the meat before braising: Browning the meat adds flavor and color. You can do this in a Dutch oven or a large skillet over medium-high heat.
- Use a flavorful braising liquid: The braising liquid is what gives the meat its flavor. Use a combination of beef broth, wine, and spices. You can also add vegetables such as onions, carrots, and celery.
- Cook the meat until it is fall-apart tender: This can take several hours, but it is worth the wait. The meat should be so tender that it can be easily shredded with a fork.
- Serve the chuck roast with your favorite sides: Mashed potatoes, roasted vegetables, and a simple green salad are all good options.
Conclusion:
Chuck roast is a delicious and affordable cut of meat that is perfect for a slow-cooked meal. With a little time and effort, you can create a tender and flavorful dish that your family and friends will love. So next time you are looking for a hearty and satisfying meal, give chuck roast a try. You won't be disappointed.
