Provided by Chris Morocco

Yield Serves 8

Number Of Ingredients 7

2 cups mixed dried heirloom beans, soaked overnight
2 quarts chicken stock or low-sodium chicken broth
4 sprigs thyme, plus leaves for serving
Kosher salt, freshly ground pepper
1/2 cup heavy cream
Flaky sea salt
Olive oil (for serving)

Steps:

Reduce heat to medium-low and simmer, partially covered, skimming any foam from surface, until beans are tender, 1-1 1/2 hours, depending on types. Discard thyme. Season with kosher salt and pepper, remove from heat, and let sit 30 minutes.
  • Return to a simmer; stir in cream. Season with more kosher salt and pepper if needed. Serve topped with thyme leaves and sea salt and drizzled with oil.
  • Beans can be cooked 3 days ahead. Let cool; cover and chill.

VEGETARIAN BEAN CURRY

Vegetarian Bean Curry image

This is a basic recipe that you can play with for seasonings and ingredients. My first batch was good, but since then I've experimented with more or less spice, other veggies like mushrooms, and meat. It's different every time I make it now. Serve over basmati rice with naan bread.

Tips:

  • Soak the beans overnight: Soaking the beans overnight helps to soften them and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 2-3 minutes, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of beans: This recipe calls for heirloom beans, but you can use any type of bean you like. Some good options include black beans, pinto beans, and kidney beans.
  • Add vegetables: Vegetables are a great way to add flavor and nutrition to this dish. Some good options include carrots, celery, onions, and garlic.
  • Use a good quality curry powder: The curry powder is the key ingredient in this dish, so it's important to use a good quality one. Look for a curry powder that is fresh and has a strong aroma.
  • Serve with rice or bread: This dish is typically served with rice or bread. Rice is a good choice for absorbing the flavorful sauce, while bread is a good choice for dipping into the sauce.

Conclusion:

This easy curried heirloom beans recipe is a delicious and healthy way to enjoy beans. It's perfect for a weeknight meal or a potluck. The curry powder gives the beans a warm and flavorful taste, while the vegetables add a pop of color and nutrition. Serve this dish with rice or bread, and you've got a complete meal that everyone will love.
