My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

Very easy. I recommend using coarse-grind ground beef, but you can use any ground beef, or other ground meat if you like. Freezes well.

Time 8h10m

Yield 6 serving(s)

Number Of Ingredients 12

2 1/2 lbs coarse-grind ground beef or 2 1/2 lbs other ground meat
1 large onion, chopped
5 garlic cloves, sliced
seasoned adobo seasoning or seasoning salt, to taste
black pepper, to taste
ground red pepper, to taste
1 teaspoon ground cumin
1 teaspoon Mexican oregano or 1 teaspoon dried oregano
2 tablespoons chili powder
14 1/2 ounces peeled crushed tomatoes
8 ounces tomato sauce
10 1/2 ounces campbell's beef consomme

Steps:

  • Place beef, garlic and onion in a large skillet or dutch oven and brwon it, then drain any excess fat/drippings.
  • Place the meat mixture in the crock pot with the remaining ingredients and stir.
  • Cover and cook on low for 8-10 hours, or until meat is tender. Serve with beans if you like. Stir them in towards the end of cooking time so they heat up.

Tips:

  • Use a variety of beans. This will add different flavors and textures to your chili. Some good options include kidney beans, black beans, pinto beans, and cannellini beans.
  • Don't be afraid to experiment with different spices. Chili is a versatile dish that can be customized to your own taste. Some common spices used in chili include chili powder, cumin, paprika, and garlic powder. You can also add other spices like cinnamon, oregano, or cayenne pepper.
  • Let the chili simmer for a long time. This will allow the flavors to meld together and develop. The longer you simmer the chili, the better it will taste. Aim to simmer the chili for at least 4 hours, but you can simmer it for up to 8 hours.
