EASY CHILI CORNBREAD BAKE
Chili and cornbread go so well together, why not bake them in the same pan! I've been making this for years and my kids love it. I use ground turkey, but ground beef could be substituted if preferred. You can make this in individual 12- to 16-ounce casseroles if you prefer. Serve with tortilla chips and top with sour cream if desired.

EASY ALMOST FAT FREE CORNBREAD
I wanted cornbread for dinner and was having a hard time finding a good low fat recipe. Many included corn kernels and my family won't eat that in cornbread! I came across this one in a Weight Watchers cookbook, though this recipe was listed in order for you to make it to use in cornbread stuffing. Therefore I was worried that it would not be good to eat on its own. But it was tasty! And it does not have the funny consistency that some fat free baked goods do. It makes 12 servings and each serving is only 2 WW points!

Steps:
- Preheat oven to 425.
- You can use butter spray to grease skillet, but it works best if you put a little oil in the skillet and put it in the oven while it is preheating. Remove skillet and tilt to coat pan bottom with oil right before you pour in the batter.
- Mix cornmeal, milk, egg and oil in bowl.
- Pour batter into hot skillet and return skillet to oven.
- Bake for 20-30 minutes depending on your oven.
- Cornbread is done when the top is nice and brown and the sides have pulled away from the pan. Turn over the pan and it should slide right out. Cut into wedges and serve hot.

Steps:
- Heat oven to 425°F.
- Grease the inside of your 8-inch cast iron skillet and place it in the oven.
- In a medium or large bowl, beat your egg and add milk and oil.
- Stir in sugar, then cornmeal, just until moistened.
- The batter should be lumpy- do not overmix.
- Carefully remove your skillet from the oven and pour in the batter.
- Return to oven.
- Bake for 20-30 minutes.
- The top of your cornbread should be golden-brown and a toothpick inserted in the center will come out clean when the bread is done.
- Serve warm.
Tips:
- Choose the Right Cornmeal: For the best cornbread, use a good quality stone-ground cornmeal. This type of cornmeal has a coarser texture and a more robust flavor than finely-ground cornmeal.
- Use Buttermilk: Buttermilk adds a tangy flavor to cornbread and helps to keep it moist. If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
- Don't Overmix the Batter: Overmixing the batter will result in a tough, dense cornbread. Mix just until the ingredients are combined.
- Bake the Cornbread in a Hot Oven: A hot oven will help the cornbread rise quickly and develop a crispy crust.
- Let the Cornbread Cool Before Serving: Allow the cornbread to cool for at least 10 minutes before serving. This will help it to set and make it easier to slice.
Conclusion:
Cornbread is a delicious and versatile side dish that can be enjoyed with a variety of meals. Whether you like it sweet or savory, there's a cornbread recipe out there to suit your taste. With a few simple tips, you can make perfect cornbread every time. So next time you're looking for a quick and easy side dish, give cornbread a try. You won't be disappointed!
