Nonstick cooking spray, for the pie pan
1 1/2 tablespoons butter
1 1/2 cups mini marshmallows
3 cups fruity rice cereal
4 cups vanilla or party cake ice cream, softened
1 1/2 cups heavy cream
1 1/2 tablespoons sugar
2 teaspoons vanilla
One 7.25-ounce bottle blue confetti chocolate shell topping
2 tablespoons rainbow sprinkles

Steps:

  • For the crust and filling: Spray a 9-inch pie pan with nonstick cooking spray.
  • Melt the butter in a medium pot over medium-low heat. Add the marshmallows and cook, stirring, until melted. Add the fruity cereal and mix until completely coated. Transfer to the prepared pie pan and press the mixture into the pan to form a crust. Let cool completely.

  • Chill the pie crust before baking. This will help to prevent the crust from shrinking and becoming too brown.
  • Use a variety of colors of sprinkles. This will make your pie more festive and fun.
  • Don't overmix the pie filling. Overmixing can make the filling tough.
  • Bake the pie until the filling is set and the crust is golden brown. This usually takes about 45 minutes.
  • Let the pie cool completely before serving. This will help the filling to set and the pie will be easier to slice.
