Time 7m

Number Of Ingredients 3

2/3 cup sugar, brown
2 cups coconut, flaked,
1/2 cup peanuts, coarsley chopped

Steps:

  • 1. Put the sugar in a pan and heat until it melts. You will need to work quickly, stir constantly until it becomes thick and dark brown in color.
  • 2. Now add the coconut and cook for 2 minutes. The sugar will turn light brown when ready. Add the peanuts and mix well.
  • 3. Remove the pot from the heat and let it cool slighty. When the sugar mixture is cool enough to handle, form into small balls and place on wax paper to set.

Tips:

  • Use fresh, unsweetened coconut: This will give your coconut balls the best flavor and texture. If you're using sweetened coconut, reduce the amount of sugar in the recipe.
  • Chill the coconut mixture before rolling it into balls: This will help the balls hold their shape better.
  • Roll the coconut balls in your favorite coating: You can use shredded coconut, chopped nuts, or cocoa powder.
  • Store the coconut balls in the refrigerator or freezer: They will keep for up to 2 weeks in the refrigerator or up to 2 months in the freezer.

Conclusion:

Coconut balls are a delicious and easy-to-make treat that can be enjoyed by people of all ages. They're perfect for parties, potlucks, and gift-giving. With just a few simple ingredients, you can create a batch of coconut balls that will disappear quickly. So next time you're looking for a sweet treat, give these coconut balls a try.
