EASY CINNAMON SUGAR BAKED APPLES
This is a cooking method I use for apples and sweet potatoes. It is quick and easy and your family will love it. This recipe does require a convection oven. Put some vanilla ice cream on the hot apples and you have a quick and easy dessert. Enjoy!

Steps:
- 1. Preheat oven to 400 convection bake. Wash and cut the top and bottom of the apples. Use a paring knife and cut around the core in the center of the apple. Take your fingers and push the core out of the apple. If the core is too hard to remove, cut a little bit deeper around the core. For a swallow baking dish cut the apples in half around the middle of the apple. They should look like a barrel cut in half with 2 cut sides per apple. (I hope that's not confusing. You want the hole in the apple facing up in the dish).
- 2. Place the apples in the dish, one cut side up and cut side down. Tip: for easy cleanup, use a disposable foil pan. You can buy 1/2 pans cheap at a big box club store.
- 3. Melt the butter (I melt the butter in the microwave for 30 sec.) While butter is hot mix in brown sugar. Once brown sugar is dissolved, pour mixture over the apples and completely coat each piece by rolling them around in the mixture.
- 4. Cover dish with foil and convection bake 400 for 30 minutes.
- 5. Remove foil and sprinkle the top of each piece with the cinnamon and cinnamon sugar. DO NOT TAKE A SHORTCUT AND USE JUST CINNAMON SUGAR. The pure cinnamon makes the dish.
- 6. Cook uncovered 400 convection bake for 15 minutes or until brown on top. Remove from oven and drizzle the juice in the pan over the apples. Put some ice cream on the hot apple and you have a quick and easy dessert.
HASSELBACK CINNAMON SUGAR BAKED APPLES
I grew up in the Pacific Northwest where it seemed like just about everyone had apple trees in their backyard. We had so many apples that we had to find different ways to use them up. This dish was always our go-to since it's an easy way to transform an apple into something fun and particularly tasty with a scoop of ice cream on the side. The fan-like slicing technique known as Hasselback famously creates lots of surface area perfect for trapping sweet cinnamon sugar that caramelizes deliciously during baking. You can easily double this recipe to serve 4; just use a medium baking dish and adjust the cooking time as needed.

Steps:
- Place a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking dish with parchment paper.
- Place an apple half rounded-side up on a cutting board. Starting at the outermost edge, slice down most of the way (but not all the way) through each half at 1/8-inch intervals, creating fan-like slices all the way across the apple. You can place wooden chopsticks on each side of the apple to act as guardrails to make sure your knife doesn't cut all the way through.
- Arrange the sliced apple halves flat side-down in the prepared baking dish. Use a pastry brush to baste the bottoms, tops and between the slices of the apples with the melted butter. In a small bowl, combine the sugar and cinnamon and sprinkle all over the apples and into the slits. Bake on the center rack until the apples are tender and lightly browned, 20 to 25 minutes. Serve warm with vanilla ice cream.
