- Heat milk and 1/3 cup butter together in a microwave-safe container in a microwave on high power for 30 seconds. Stir and repeat until mixture reaches 120 to 130 degrees F (49 to 54 degrees C). If too cool, microwave for 15 seconds more; if too hot, let cool to proper temperature.
- Whisk eggs lightly in a small bowl, adding a small amount of milk mixture at a time to temper eggs until thoroughly combined. Pour mixture into the bowl of an electric stand mixer.
- Mix 3 cups flour, sugar, yeast, and salt together in a large mixing bowl. Add to milk mixture and beat on low speed using a dough hook, scraping down the sides of the bowl using a rubber spatula as needed.
- Add remaining flour slowly, 1 tablespoon at a time, until dough begins to pull away from the sides of the bowl. Continue to knead on low speed until dough looks smooth, 7 to 10 minutes; dough will be sticky and the bottom will remain stuck to the bowl.

- Sift flour with salt, baking powder and sugar into a large mixing bowl, and make a well in the center of the dry ingredients. In another bowl, beat eggs until well mixed, pour into the center of the dry ingredients, along with milk, pure vanilla extract, and butter, which should be melted and cooled slightly, so it is warm, not hot. Mix by hand with a wooden spoon, or on the lowest speed with a mixer.
- Once the dough is holding together, turn out onto a floured board, knead for 1 minute. This dough is easy to work with-if it seems sticky, sprinkle a bit more flour onto it as you work. Turn the dough over once or twice as you are kneading, then roll the dough out into a rectangular shape about 1/4 inch thick. Shoot for about a 9" by 13" rectangle, just like a baking pan, but don't worry if it is a bit bigger or smaller.
- Combine the filling ingredients, mixing well in a small bowl, then spread onto the dough using a flexible spatula, the back of a spoon or a pastry brush, smoothing out from the middle to 1/2 inch from the edge. Roll the dough up into a jellyroll from the long side, and, using a sharp knife, cut the dough as evenly as possible into 18 pieces.
- Mix the topping together in a small bowl. Use spray oil to grease a muffin pan, then divide the topping between 18 muffin tins. After dividing up the topping, place one piece of dough, cut side down, in each muffin tin, on top of the walnut mix. Bake in a preheated 350° oven for 20-25 minutes, until golden brown.
- Remove the cinnamon rolls right away to cool, if some of the topping stays in the tin, just pull it out with a spoon and replace it on top of the muffin while it's still hot. Prepare the icing by whisking all the ingredients together while the rolls cool for at least 10 minutes,. Cinnamon Rolls look great served upside down or rightside up. Pick which you prefer, drizzle with icing and serve.

- 1. Ingredients 1 Crescent Dough Sheet, cinnamon, butter, pecans, sugar
- 2. Open the Crescent roll container and unroll and flatten.
- 3. Take a spoon and with the backside press in to the softened butter, spread softened butter on flattened Crescent single sheet, cover all area of sheet.
- 4. In a small container add sugar and cinnamon, stir well to blend.
- 5. Scoop out tablespoon at a time of cinnamon/sugar mix and spread all over the buttered sheet.
- 6. Spread chopped pecans on cinnamon/sugar covered sheet.
- 7. Starting on one end of sheet begin to roll up, taking care to keep ends even. Pat ends to make even.
- 8. With a strip of dental floss, slide under the rolled sheet about 1 1/2" wide and twist to cut through. Or you can use a serrated knige and cut carefully in to pieces.
- 9. Place in a butterd cake pan keeping a space between the rolls. Bake at 350 degrees for 10 minutes or until just golden brown.
- 10. Remove from oven and cool slightly. Add frosting to each one. Frosting recipe: 1 cup powdered sugar 2 tb of softeded butter pinch salt 1/2 teaspoon instant coffee granules 1/2 teaspoon vannilla extract 3 tb half and half or alittle more if you like the frosting thinner. Mix well with spoon until creamy and smooth.
- 11. Add chopped pecans to warmed frosting. Enjoy warm or cold.

- Spread a small amount of margarine on each roll but don't do the tips.

- Combine the sugar and cinnamon in a small bowl. Set aside. If using 12 rolls, squish them together to form a big ball. Roll dough out on a floured surface to form a 16x12-inch rectangle. Pour the 1/2 stick melted butter over the top of the dough rectangle and spread it almost to the edges with your hand. Generously sprinkle the cinnamon sugar mixture over the butter. Starting with a long side of the rectangle, roll it up jelly-roll style as tightly as possible into a long roll, ending with seam side down. With a sharp knife, cut into 12 even slices. Generously coat the bottom and sides of an 11x7-inch baking pan (or equivalent) with softened butter. Place the rolls, just slightly apart, in the pan. Cover rolls loosely with plastic wrap that has been sprayed with cooking spray. Place in a warm spot and let rise until doubled in size. - For the Filling: Mix all the ingredients together in a small bowl.
- For the Dough: Whisk the flour, granulated sugar, baking powder, baking soda, and salt together in a large bowl. In a medium bowl, whisk the buttermilk and 2 tablespoons of the melted butter together. - 1. Preheat oven to 375 degrees F. Grease a 9 inch pie plate or cake pan.
- 2. Unroll dough from can. If using the regular crescent rolls, press seams together, making sure they are sealed. Brush dough with butter, getting all the way to the edges.

Milk will work in the place of the juice if you want a more traditional drizzle!
